Sweet, sweet summer time food you should probably, no absolutely, make! So people, it’s official. Memorial Day, the (unofficial) start to summer is finally here!
Good God almighty, hallelujah! (I have listened to way too much Kenny Chesney and Tim McGraw these last couple days)
The past four days of weather have been full on summer bliss! Granted not the summer I grew up knowing, which was anywhere from 80-90 degrees + humidity. Ah Cleveland summers, I really do miss them and I am being 100% serious here. No joking. I crave the heat, live for it and I LOVE warm summer nights. Here in the mountains (I hate saying “mountains”, it makes me feel like I am trying to be cool, but I literally live in the mountains) the temps will not go above 75 during the day and it is freezing at night, and I always feel a bit of a chill in the air, but that is really probably just me. I like it REALLY hot, but with the sun shinning it is pretty dang nice. Especially on days like these last four. Bright blue sky’s, 70’s, light wind (this is unusual, the summer winds can get intense) and some what greenish grass. Pretty good Memorial Day weekend weather!
Alright, so all this excitement for summer had me thinking I needed to do a summer foods/Memorial Day round-up for ya all. Plus, I have been plotting out my recipe ideas and oh boy, they’re good. Prepare yourselves for a boat load of fresh summer foods. I am talking fruits, veggies, burgers, seafood, fruits, ice cream, milkshakes, salsa, guacamole. For the next three months I am pretty much just planning on shoving summer down your throat. It’s gonna be glorious.
Here’s the deal. Today we’re kicking things of with a whole bunch of deliciousness to make and eat tomorrow, or make and eat tonight or make and eat all summer long. Then check back bright and early tomorrow morning for something to wash it all down with. Ok, fine it does not have to be bright and early, but you’re gonna want to check it out. It’s good!

Jalapeños can be tricky. Haha. I decided to make these to go with, your recipe, grilled corn jalapeño peach quinoa and it paired so perfectly. I think the barbecue dressing on the quinoa tied it to the cornbread it had such a perfect summer feel. Loved them.
