One Skillet Goat Cheese Stuffed Chicken and Orzo, the perfect spring time dinner that's quick, easy, and healthy...ish. Pan seared chicken breasts, stuffed with goat cheese, walnuts, basil, and honey. Cooked together with orzo pasta for a complete dinner made in just ONE skillet. There's even some Tuscan kale thrown in for a pop of green. Truly one of those all in one dinners that just about everyone will love.I know I talked about this yesterday, but I'm so excited that spring is here.   • Herby Polenta + Seared Honey Butter Blackened Scallops. Perfect combo? 100% YES. Well, I don't really believe in perfect, but this is pretty close. Pan Seared scallops, spices, creamy, herby polenta, HONEY BUTTER. It's all very good. Favorite part? It takes maybe 30 minutes to throw together (probably less).   • Cauliflower Shawarma Wraps with Green Tahini and Feta. Very into creating "street food" at home right now and these are my go-to. If you didn't know, Cauliflower "Shawarma" is DELICIOUS. It’s in no way traditional (don't yell at me), but it is delicious. Spicy roasted cauliflower, green tahini (aka tahini with herbs), and feta stuffed into naan (cause I am obsessed).
