No Stir Brie Risotto with Lemon Butter Asparagus.

Sharing a quick and easy no stir Brie Risotto with Lemon Butter Asparagus. This simple Brie risotto is made in under an hour, requires very little stirring, and is a great way to use pantry staples and fresh springtime asparagus. It’s creamy, garlicky, swirled with melty Brie cheese, and finished with lemon butter asparagus and fresh herbs. Perfect cozy, early spring dinner or easy side, any night of the week. Everyone in the house will enjoy this dish. Added bonus? This risotto can easily be made in the Instant Pot as well!   • 30 Minute Coconut Milk Braised Chicken with Sweet Potatoes and Rice. When all you want is comfort food...but you want healthy and easy too? Make this. It's the sauciest, creamiest coconut curry with a good amount turmeric, shallots, ginger, garlic, sweet potatoes + spinach too. All made in ONE pot. All the (very) GOOD things. Pleas just add a side of naan. Recipe on HBH - linked in profile.
  • Kale Caesar Salad with Sweet Potatoes and Crispy Chickpeas. Personally? I find the usual Caesar a little boring, so I just added a ton of flavor + texture + all the good things to mine. It's layered with sweet potatoes and (extra) crispy chickpeas. It's tossed with a creamy, lemony parmesan tahini dressing and there is extra parmesan + avocado too. It's not "classic" and yes, I will get called out for that, but it sure is a GOOD Caesar. Bonus? All pantry staples. Just add fresh greens :) ... ... On a large rimmed baking sheet, combine 2 sliced sweet potatoes, 2 tablespoons olive oil, 1-2 tsp chipotle chili powder, 2 tsp paprika, and a pinch each of salt and pepper. Toss. Roast at 425 for 20 minutes. Add 1 can chickpeas 2 tbs oil. Toss. Roast another 20 minutes. In salad bowl, combine 1 large head kale and 4 cups shredded brussels sprouts. Dressing: combine everything in a blender... 1/4 cup extra virgin olive oil juice of 2 lemons 2 tablespoons dijon mustard 2 tablespoons tahini 2 teaspoons Worcestershire sauce 1-2 cloves garlic, grated kosher salt and black pepper 1/3 cup grated parmesan, plus more for serving 2 tablespoons fresh chopped parsley Toss the roasted sweet potatoes and chickpeas in with the salad. Add the dressing and toss to combine. Top with avocado and additional parmesan. Enjoy!!
  • Cheddar Pierogi with Caramelized Onions + Bacon. My "stuck at home" Saturday night situation and you know something? I'm pretty OK with it. It's my favorite childhood food...but made BETTER with potato + cheddar filled dumplings, layered with caramelized onions and finished salty bacon. Add a dollop of sour cream if you'd like. Oh. So. Very. Good. Recipe on HBH - linked in profile. PS. did you eat Mrs. T's Pierogi growing up? PSS. if you are bored right now...make these :)
  • Cinnamon Sugar Brown Butter Popovers. Think cinnamon sugar toast, but swap in popovers + browned butter. They're easy, light and airy, hinted with vanilla, stuffed with cream cheese (if you’d like), dipped in warm browned butter and rolled (generously) through sweet cinnamon sugar (bringing back all the best childhood eats).
