Sharing All the Healthy Recipes You Need + Healthy January 2020. The new year is almost here, so let’s start it off right with my favorite healthy…ish recipes. I’ve included all of my favorites – everything from breakfast, to lunch, to dinner, to dessert. And each and every one of them is delicious AND healthy…ish. I’m excited to start January off with plenty of color…and deliciousness too. Which of these recipes are your personal favorites?
Today is the very last day of 2019 and I’m feeling all kinds of emotions. I have so much excitement for 2020, but at the same time, I’m sad to be letting go of 2019. This was such a good year and it’s crazy that it’s already over. I’ve said this multiple times this week, but the year really flew by. And the month of December…well I felt like I blinked and it was over in minutes. I’d love a time machine to slow things down! But since I can’t do that, it’s time to look ahead to 2020.
On Thursday we’ll officially kick off our 4th year of Healthy January. But today I’d like to share my favorite healthy (ish) recipes from year’s past in hopes of inspiring you all to embrace color this January (and all year long). The most googled words on New Year’s Day are healthy recipes, diets, and detox. BUT I really don’t believe in any of that. I understand we all want to eat healthier after the holidays, but I still want to enjoy warm and cozy foods. Thankfully this can be done…and I have the recipes to prove it! Yes, some of them have butter, many probably have cheese, but each recipe is filled with wholesome ingredients, plenty of vegetables, whole grains, healthy fats, and lean proteins too. For me, it’s all about balance…everything in moderation.
What does this mean? Well, I do believe in eating unprocessed food, but in addition to bright and colorful fruits and vegetables, there’s also cozy plates of pasta, soups, sheet pan dinners, and yes, even desserts. Healthy…ish is the keyword.
And no boring salads, just really GOOD food.
This month I’ll be sharing plenty of healthy soups, salads, desserts, and easy dinners (one skillet, sheet pan, and instant pot meals are coming!). Before we dive into brand new recipes of 2020, below are some of my favorite healthy dishes from year’s past. My hope is that these recipes will inspire you to actually move forward with your plans for healthy eating in the new year.
Have a very Happy Healthy New Year! No post tomorrow, but we’ll see you all in 2020 with a brand new recipe on Thursday!

These all look amazing and I want to try every one of them! I discovered your blog recently and fell in love with it, so I bought your book. Every recipe I’ve tried has been a success. All I have to do is tell my husband that we’re trying something from Half Baked Harvest and he’s on board. Thank you so much for making the world a tastier place!
That is so amazing to hear! Thank you so much Marita!! xTieghan
I’m a single mother of three and I love your recipes because 1) they are delicious, 2) they are original, and 3) they always turn out. We’re an almost vegan family and I’m really working to teach my kids that what we cook and eat impacts not just our own bodies but the world we live in. I would love even more plant-based recipes in the new year. Thanks so much!
Thank you Nan! I am so glad this turned out so well for you! xTieghan

Happy New Year, Tieghan! I just bought both of your books, flipped through all of the recipes and marked off SO many dishes I want to try! So much goodness! <3 Something I'd be interested in seeing more of this year here are a few more lamb recipes too. Can't wait to see how this year unfolds for you. You are a constant food inspiration for me, and doing my meal planning for the week has become such a joy because of your books and the recipes you upload here. THANK YOU! ?

I am not sure if this is the right place to post this but any keto/ low carb recipes would be much appreciated in the new year! Especially vegetarian low carb- I find a lot of the vegetarian subs come with added carbs. I try to be creative but it is difficult!
Yes this is! Thank you so much Tessa! xTieghan
This is so incredibly helpful, thanks Tieghan! Still recovering from that delicious but decadent white chocolate cranberry cake…
Haha so glad you loved that! Thank you Lea! xTieghan

Thank you Paige! I hope you love that recipe! xTieghan
Your recipes are delicious but with so many of us doing low carb, would it be possible to add the # of carbs per serving?
Hi Carolyn! I will look into it! I have not put those up because I believe in healthy balanced eating.. I hope you try this! xTieghan
I so love this site! I have printed many recipes from here and I will be purchasing your books this year. I know you asked this on the Sunday Favorites post, but I had to comment before I forget. I have recently gone vegan, and I love how your recipes are so versatile that I can swap ingredients out and go from meat to meatless. However, I have a humongous sweet tooth. Can you please whip up vegan sweets throughout the year?
Hi Sallie!! I can certainly try to come up with some vegan sweets. I have a few coming this month that I think you will really enjoy!! 🙂 Thank you so much for following along and Happy New Year! xTieghan
