This is kind of like your favorite Italian chicken and pasta dinner, but all made in one skillet and in under an hour too. It’s creamy, a little garlicky, lemony, and as close to perfect as it gets.   • 30 Minute Coq au Vin Chicken Meatballs. One of best recipes make for these cold December nights. It feels fancy…and cozy, but is ready in less than an hour and is the easiest to put together. The coq au vin sauce is KEY. It’s made with whole lot of red wine and it is loved by everyone…which is why I am making this for the fam over the holidays. Just one thing? Don’t skip the browned butter mashed potatoes. Everything is better with a side of creamy mashers. ENJOY. … … 1 1/4 pounds ground chicken or turkey 1 egg 1/3 cup Panko bread crumbs 1/3 cup grated parmesan cheese kosher salt and black pepper 2-3 slices thick-cut bacon, chopped 1 yellow onion, chopped 4 cloves garlic, minced or grated 4 carrots, chopped 2 cups cremini mushrooms, sliced 2 tbs tomato paste 1 1/2 cups dry red wine 1 cup low sodium chicken broth 2 bay leaves 4 thyme sprigs Add the chicken, egg, bread crumbs, parmesan, and a pinch each of salt and pepper to a bowl. Roll into tablespoon-size balls and place on a parchment lined baking sheet. Bake at 425 for 15 minutes. Cook the bacon in a large skillet until crisp. Remove the bacon and reserve. If there's excess bacon grease, drain off all but 1 tbs. Add the onion and cook for 5 minutes, until softened. Stir in the garlic, carrots, and mushrooms. Cook another 5 minutes. Add the tomato paste. Add the wine, chicken broth, bay leaves, and thyme. Season with salt and pepper. Bring the sauce to a boil, cook 10 minutes or until the sauce thickens slightly. Stir in the meatballs, cover and cook 5 minutes, until the meatballs are coated in the sauce. Remove the bay leaves and thyme. Stir in a handful of parsley and the bacon. Eat the meatballs and sauce over mashed potatoes. #recipevideo
