I’m sharing a roundup of my favorite recipes for Easter! Easter is such a special spring holiday. These light and fresh recipes are perfect for gathering with friends and family for brunch or dinner. I’m sharing some sweet brunch recipes, quick appetizers, and my selections for family dinner and dessert.

I’ve been getting a lot of requests from you all this week to share my favorite Easter recipes! To be honest, Easter is sometimes a holiday I don’t put a lot of thought into recipe-wise. I’ve only made a handful of Easter hams, as most of my family members are not huge fans. That being said, mom has always loved this oldie-but-goodie ham recipe from way back in 2014. Of course, I have plenty of other colorful spring recipes that are equally perfect for the Easter table!!
So I thought I’d take some time today to gather them all in one place. I’d love to hear what recipes you plan to make this year!

1/2 cup melted coconut oil
1/2 cup brown sugar
2 large eggs
2 teaspoons vanilla extract
11/3 cups grated carrot
11 4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/2 cup shredded coconut (optional) (optional)
1 stick salted butter, at room temperature
1/2 cup packed dark brown sugar
1/4 cup heavy cream
3 ounces cream cheese, at room temperature
11/2 – 2 cups powdered sugar
2 teaspoons vanilla extract
Preheat the oven to 350° F. Line a 9 inch square
baking pan with parchment paper.
2. To make the carrot cake: In a mixing bowl, beat
together the coconut oil, brown sugar, eggs, and
vanilla until combined. Mix in the carrots. Add the
flour, baking soda, cinnamon, and salt, beating
until just combined. Stir in the coconut, if using.
3. Pour the batter into the prepared baking pan.
Bake for 30-40 minutes, or until center is just set.
Remove and let cool for at least 30 minutes before
frosting.
4. To make the frosting: Melt together the butter,
brown sugar, and heavy cream in a medium
saucepan. Bring to a boil and cook 2 minutes or
until the sugar has dissolved. Add a pinch of salt.
Remove from the heat and add to the bowl of a
stand mixer. Let cool completely, then add the
cream cheese and beat until creamy. Sift in the
powdered sugar, then add the vanilla. Beat until
well combined. The frosting should be creamy, if it
feels too runny, add powdered sugar to thicken it
or stick it in the fridge to firm up.
5. Spread the frosting over the cake. Slice and enjoy!
