Baked Chipotle Chicken Taquitos.

So apparently 7 Eleven has some really good taquitos…… That are kept warm in a hot dog rotisserie case all day, well actually 24/7. Call me crazy, but this sounds disgusting! Who knows what those things are really stuffed with. My brothers however have a very different opinion. So I of course had to come up with […]

Spinach and Havarti Phyllo Casserole.

Spinach and Havarti Phyllo Casserole…just look at that crust! Flaky, buttery crust! I made this casserole over the weekend. It was the perfect Saturday night meal and nice change from the usual pizzas and pasta dishes we usually do on the weekends! I need to cook with Greek ingredients more often! I mean wow, this […]

Roasted Butternut Squash Lasagna

Yesterday I gave you guys my favorite recipe for simple egg pasta dough. Today I want to share one of my favorite ways to use that dough – Lasagna! Typically I like to do a traditional lasagna with tomato sauce and meat, one because it is a huge hit and two because EVERYONE will eat […]

Simple Pasta Dough

Two Christmases ago I was given a traditional pasta maker as a gift. For a while it sat unused. Then one day I realized how silly this is…I need to make fresh homemade ravioli! I’m not going to lie, the first time I made fresh pasta it turned out great, but it was HARD. It […]

Black Spiders.

Well brown really, but who’s gonna tell? I was asked by Asher’s pre-school teacher if I would bring a in a desert for their Halloween party! Of course I was excited, especially since I had just gotten an idea for chocolate brownie spiders! I used one of my favorite fudgy brownie recipes and topped them […]

Butternut Squash Gnocchi

Rustic butternut squash gnocchi, and I only say rustic simply because I was too lazy to make the little ridges (also called Rigagnocchi) on each gnocchi, is a must try for gnocchi lovers. Now you could do plain old potato gnocchi, which you know, is fine, but why not do butternut squash gnocchi? I mean it […]

  • Persian inspired Herb and Beef Stew with Rice. Because it's very much stew weather and I love a cozy weekend dinner. This stew isn't your average stew. It's different and it's VERY GOOD. It's lemony, spiced with turmeric, heavy on the herbs, served over rice, and it's even made in all ONE POT. Very into it. Shared the recipe on HBH this week - link in profile. PS. the key word is inspired, not authentic :) #hbhhealthyjanuary #stew #comfortfood
  • Lemon Poppyseed Cake with Citrus Honey Glaze. Know it's January, but I'm still baking cake because when it's single digits and a 3 day weekend, what else do you do?! Enter this extra wintery, made on the healthier side cake. It's light and lemony, swirled with nutty poppy seeds + finished with a sweet citrus honey glaze. Every last crumb is SO GOOD. And? It's EASY + pretty. Recipe on HBH - linked in profile. Full how-to is currently on my IG stories too. #hbhhealthyjanuary #cake
  • 30 Minute Coq au Vin Chicken Meatballs. Friday night snow storm, so comfort food all the way. The sauce is basically an entire bottle of red wine, with h mushrooms and herbs. It's flavorful, rich, and best served over mashed potatoes...with a side of crusty bread. Perfect for the wekkend. Recipe link in my profile. Get at it. #comfortfood
  • Spicy Peanut Soup with Sesame crusted Halloumi. I am well aware that some might find this soup very odd, but trust me on this one. It’s peanutty, a touch spicy, extra creamy, has a good amount veggies (hello to sweet potatoes + kale), and yeah, I topped it with pan-fried sesame crusted halloumi cheese too...which is KEY. It's the best salty, crispy topping. Like I said, it's different. Just try it. Promise it is GOOD. And EASY. almost vegan...but I do really recommend that cheese :) Recipe on the blog - link in profile. #hbhhealthyjanuary #almostvegan #peanutbutter
