  • (summery) Coconut Chickpea Curry...with fried Halloumi cheese + rice too. Because I really love a lot of flavor, texture, and yeah, a little crispy pan fried cheese (who doesn't!?). So. Very. Delicious. It's saucy + creamy, (almost) vegan, and pretty easy too. Oh and the chickpeas? They're made extra crispy. The Best. Recipe on HBH (link in profile).
  • One Pot 30 Minute Creamy Tomato Basil Pasta Bake. This is my "back pocket" pasta I fall back during the later spring/summer months. It's creamy, a touch spicy, a bit cheesy (ahh, kind of a lot cheesy), and heavy on tomatoes + basil. Added bonus? This one uses the simplest of ingredients (most of which are pantry staples). And?   • Caprese Prosciutto Salad...kind of like summer in a bowl. Add pasta or farro or even quinoa (all are good, so take your pick), plenty of mozzarella (or you know, go fo some burrata) + an herby lemon balsamic vinaigrette. It's almost no cook, comes together in minutes, and it's going to be a staple all summer long. Recipe linked in profile. Happy Memorial Day/unofficial (but official) start of summer 🍉🍓
  • No Fuss Lemon Tart 🍓 with all the berries on top because it's just that time of the year. This is one of my favorite recipes to date. The lemon cream is made with 4 ingredients and the crust is sweet and salty. It's really just the BEST and every time I make it, it's shocks me just how easy it is and how delicious too.
