Welcome to the first post of 2016 everyone!!

I can’t believe it’s already here, but I’m set to begin this awesome new year. I’m not really one for New Year’s resolutions, but I definitely have set some serious goals and I’m pumped to get started on them!
Once of my goals is a whole month of healthy eats. I know what you’re thinking… BORING. But I promise you guys, nothing I have planned is boring in the least, and I am honestly SO excited about all of the recipes I’m planning to share this month. Literally cannot wait.
That said, we still need to ease into “Healthy January” and the new year. It’s always a bit rough when the holidays are over, getting back to our daily routines and maybe trying to make up for a bit of excessiveness (hey, that’s what makes the holidays fun!). So today I am sharing My Top Twenty Healthy Recipes for the New Year to get us excited to jump into the new year. I make these recipe all the time and LOVE how healthy and flavorful they are. AND, there’s nothing boring about THESE healthy recipes!

Happy 2016! I have to try making those Vietnamese lettuce wraps, black bean sweet potato chili, Thai laska, zucchini peanut noodles, veggie burger, tuna poke, ahi tacos and slow cooker chicken! They ALL look delicious!

We will be trying the Crockpot Honey Harissa Chicken with Chickpeas, Feta and Jeweled Pomegranate Rice…love all the flavors. I have a question about the 3 ingredient app…I could not get the biscuits to cook all the way. I cooked an extra 20 minutes & the center was still mushy. I checked my oven temp & it was accurate. I use a Staub pie plate & followed your directions exactly. Thoughts?
Hey Debbie, a lot of people have hade this issue and honestly I am stumped. I make this all the time and bake it for about 35 minutes and it is perfect, the center is a little doughier than rest, but we like it this way. My only suggestion is to cover the dish with foil and bake until the center is cooked through. Sorry for the trouble!

Hey Tieghan, Happy New Year, hope you had a good one. I definitely want to go the more healthy route, but not to the point where I am depriving myself majorly. All the ‘not so good’ choices with food, will be done in moderation…
I love my food, and I love to eat, so I just have to keep it fun and real, no matter what I eat.
