Getting tropical as we head into summer with this fun and easy Strawberry Mojito. White rum mixed with fresh strawberries, plenty of fresh lime, and mint. This mojito receives an extra special touch with a top off of ginger beer for a fizzy, gingery kick. It’s colorful, refreshing, and a wonderful mojito for summer. A sweet lime-sugar-rimmed glass really seals the deal and keeps everyone coming back for seconds.

I’m kicking off summer with our first summery cocktail of the season. Y’all, I am so excited. Funny enough I made this way before heading to Miami. But I loved that mojitos were so popular there. The Cuban influence on food and drinks in Miami is so fun!

I’ve always loved a mojito, but aside from these Creamy Coconut Lime Mojitos (which you really need to try), I haven’t made very many. I figured this would be a fun cocktail to kick off our Summer Cocktail Saturday series.

So here are the details

Mojitos are simple, even when strawberries are added. Make the lime sugar first, it’s literally just sugar and lime zest. So simple, but the sugared rim adds a sweet, sparkly touch to your glasses.

Next, make the mojito! Muddled limes with fresh strawberries and lots of mint. Shake everything up with some white rum and strain it into your glass.

I always add crushed ice and additional mint. Then top off each mojito with ginger beer for a spicy, ginger kick.

Instructions

  • 1. To make the lime sugar. Combine the lime zest, sugar, and a pinch of salt on a shallow plate. Rim your glasses in sugar, then fill with ice.
    2. In a cocktail shaker or glass jar, muddle the lime wedges, strawberries, and mint, squashing everything to release the juices. Add the rum. Fill with ice and shake until combined.
    3. Strain into your prepared glass. Top off with ginger beer. Garnish with mint. Drink and enjoy!

    Loved this recipe! I switched out the ginger beer with a splash of sprite since that’s all I had on hand, but the flavors of the strawberries, lime, and mint are so so wonderful. Very refreshing for summer!

    This was fantastic! I did modify a bit based on what I had available. I switched out the rum for vodka and the ginger beer for prosecco and it was summer perfection.
