The last full month of summer is here, and with it comes some of the very best produce of the season. The recipe collection below pulls from our August archives, dating all the way back to 2012. There’s a mix of old and new favorites, including game day appetizers, back-to-school snacks, family dinners, easy recipes for summer entertaining, and even a few bake sale ideas. There’s truly a recipe to make every day this month, so take your pick!
August always feels like a month in between. Many of us are squeezing in one last summer trip before the school year begins, summer Fridays slowly start to fade, football season is just around the corner, and we’re all trying to soak up those long summer nights while they last.
I always enjoy summer right up until the calendar flips to September. Then it’s a full stop and straight into apple season.
Until then, I’m making the most of everything August has to offer. Peaches and sweet corn are at their absolute best right now, so you’ll find plenty of recipes featuring both. I’m also sharing lots of zucchini recipes, both sweet and savory, along with quick skillet dinners and simple family meals that make busy evenings a little easier.
Even though we’re still in full summer mode, my recipe planning naturally starts shifting toward back-to-school meals and football weekends. I’m making French toast sticks for busy mornings (and stashing them in the freezer), easy casseroles for weeknights, and peach dump cake on repeat.
There are so many favorites in this collection. Scroll down for 31 recipes to cook this August, and let me know which one you’ll be making first. I can’t wait to see what’s cooking in your kitchens this month!
Looking ahead, what recipes would you like me to share this month?

Iced Brown Sugar Latte with Shaken Espresso
Creamy, ice cold, and just perfectly sweet. Best for sipping while doing just about…anything!
Saucy Coconut Curry with Rice Noodles and Garden Vegetables
Make this curry with whatever you have on hand, I used a mix of sweet corn and zucchini, coconut milk, and rice noodles. Then add some heat with curry paste, and balance it all out with a squeeze of lime. Best part…all you need for this recipe are pantry ingredients and 30 minutes.
The best summer corn chowder. So quick, so easy, and so delicious. Just grab a few ears of sweet corn, some spicy, smoky, chipotle peppers, some sharp cheddar cheese, and a few other ingredients. In less than an hour you can have the perfect, summery, cozy bowl of corn chowder.
Summer zucchini sliced into ribbons and rolled up with a basil pesto and ricotta cheese mixture. Then baked in a spicy, herby tomato sauce that’s creamy and so delicious!
Quick-cooking, gluten-free rice noodles tossed in a sweet and spicy Thai sauce with lean chicken, zucchini, garden fresh bell peppers, carrots, and summer basil.
Creamy, garlicky, packed with zucchini, and finished with fresh herbs and parmesan cheese, this dish uses just one skillet and is ready in under 30 mins.
Broccoli Cheddar Chicken and Rice Casserole, kind of like broccoli cheddar soup meets cozy weeknight casserole…made in one pot in under an hour…healthy-ish, easy and delicious!
Shredded chicken in a spicy BBQ beer sauce stuffed into warmed tortillas. All made in the instant pot and served with a creamy, spicy avocado jalapeño sauce!
Peach Ricotta Layer Cake with Browned Butter Buttercream
Favorite cake of the summer….hands down. Three layers of fluffy cake, filled with bourbon peach jam, raspberry jam, and the most delicious browned butter buttercream. This cake is light, airy, peachy, sweet, and all the things you want in a summertime cake.
The crust is a mix of salty pretzels, sweet honey, and a bit of butter. The cream filling is made with four base ingredients…heavy cream, crème fraîche, vanilla, and a touch of sugar. The filling is spooned into that salty crust and topped with in-season honeyed peaches.
