Kind of like cheesy nachos, but instead of chips, we're substituting crisp sweet potatoes skins...so better! Made simply with sweet potatoes, chicken, chipotle chilies, spices, a touch of lime, spinach, and a generous amount of sharp cheddar cheese. Each homemade, oven-baked, sweet potato skin is delicious…and pretty healthy too. Think crisp on the outside, soft on the inside.   • Weeknight 30 Minute Coconut Curry Chicken Meatballs…with spicy mango salsa. Not your average bowl of meatballs, but better? Just depends on what kind of mood you are in. BUT if you are looking for a cozy curry, this one is GOOD --> pantry ingredients + 30 minutes + super simple. It's creamy, saucy, a touch spicy and it's even pretty healthy too. So basically you can't go wrong with this bowl of curry. Grab the full recipe below. ...
Add 1 pound ground chicken chicken, 2 green onions, 1 garlic, 1 tsp Worcestershire, and a pinch each of salt and pepper to a bowl. Mix. Coat your hands with a bit of oil, and roll the meat into tablespoon-size balls (will make 15-20). Place on baking sheet. Bake at 450 for 15 minutes or until the meatballs are crisp and cooked through.Heat 2 tbs sesame oil in a large skillet. Add the 2 shallots, 2 bell peppers, and 1 inch fresh ginger, grated. Cook 5-8 minutes. Season with salt and pepper. Stir in 2-3 tbs Thai red curry paste. Add 1 (14oz) can coconut milk, 2 tbs soy sauce, and 1 tbs fish sauce. Bring the mixture to a boil, add the meatballs and cook until the sauce thickens slightly. Remove from the heat and stir a handful fresh cilantro or basil.spicy lime mango
1 mango, diced
1 jalapeńo, seeded and chopped
juice and zest from 1 lime
Combine in a bowl.

I say surprisingly because the mustard part tends to throw me off. BUT. This sauce. It's EVERYTHING. Made with white wine, Dijon mustard, fresh herbs, and parmesan cheese, it is creamy, a little cheesy, super flavorful, and best served over mashed potatoes...or maybe those that creamy mashed cauliflower from last week?
