  • Spicy Peanut Soup with Sesame crusted Halloumi. I am well aware that some might find this soup very odd, but trust me on this one. It’s peanutty, a touch spicy, extra creamy, has a good amount veggies (hello to sweet potatoes + kale), and yeah, I topped it with pan-fried sesame crusted halloumi cheese too...which is KEY. It's the best salty, crispy topping. Like I said, it's different. Just try it. Promise it is GOOD.   • Sheet Pan Salmon with Citrus Avocado Salsa and Potatoes. Bringing all the (winter) color and flavor with this recipe and super happy about it. Baby potatoes (addicting) + herby, citrus roasted salmon (so much flavor), topped with a tangy citrus avocado salsa (my favorite) + a little sesame seed tossed arugula too.   • Chocolate Chunk Coconut Banana Bread. Truly the only banana bread recipe you really need. Comes out perfect every time, is the easiest, healthy...ish, and is (generously) swirled with chocolate chunks.
