Meaning this a one pot recipe (OR make it in the slow cooker...OR even instant pot). Simple, perfect, and best served on cold nights...like tonight. Just don't skip that cheesy bread.   • Herby Buttered Mushroom Stroganoff. My current go-to because the temps are cold and this is the coziest bowl of buttery noodles. Think herby, caramelized mushrooms, classic egg noodles, and the creamiest sauce (with a splash of wine...). Done in 30 minutes. Amazing for Sunday night, but easy enough for any night. And? SO GOOD. .. .. 8oz uncooked egg noodles 2 tbs extra virgin olive oil 1 large shallot, thinly sliced 4 cups mixed mushrooms 3 tbs salted butter 2 cloves garlic, minced or grated 2 tbs fresh thyme leaves 1 tbs fresh chopped sage 2 tbs flour 1 cup low sodium chicken or vegetable broth 1 cup dry white wine 1 tablespoon Worcestershire sauce 1 teaspoon balsamic vinegar 1/2 cup canned coconut milk or heavy cream ... 1. Cook the noodles according to package directions 2. Heat the olive oil in a large skillet over high heat. Add the shallots and cook 2-3 minutes. Add the mushrooms and season with salt and pepper. Cook  5 minutes, until golden. Reduce the heat to medium. Add the butter, garlic, thyme, and sage. Cook,  2-3 minutes. Remove half the mushrooms from the skillet to a plate and set aside. 3. Sprinkle the flour over the mushrooms and cook another minute. Add the  broth, wine, Worcestershire, balsamic, and season with salt and pepper. Bring the sauce to a low boil, then reduce the heat to medium, simmer  5 minutes. Stir in the milk, cook 3 minutes. Add the noodles, mushrooms, and 1/4 cup parsley. 4. Serve topped with fresh thyme and pepper...maybe add some parmesan. That would be very good. Enjoy! #eatingfortheinsta #falldinners #instayum
