  • One Pot Creamy Cauliflower Mac and Cheese. This. Is. So. Good. Healthy…ish. And easy too. Kind of like the stove-top Mac and cheese we ate as kids, but so much better. It's extra creamy, saucy, a little garlicky, there is plenty of cauliflower hidden throughout, and it’s all made entirely in one pot. As close to perfect as it gets.   • Earl Grey Lemon Ricotta Pancakes. The Sunday (snow day) pancake...that is good at any point throughout the day. Light and fluffy, infused with earl grey tea, hinted with lemon, made with ricotta, and best enjoyed with salty maple butter on top...because I always love a little sweet + salty combo. If you wanted to add chocolate chips, I would tell you that's a genius idea :) shared the recipe on HBH this week. Link in profile.
  • The Saturday night (party size) Italian Melt...ciabatta, olives, peppers, spreads, meats + cheese, baked until melty on the inside, and just perfectly crusty outside. It. Is. Very. Good.   • Sheet Pan Blackened Salmon Bowl with Potatoes and Avocado Goddess Sauce...plus feta and other things too because you all know I love a loaded bowl. It's healthy food that is addictingly good, super simple, and pretty too. And it's perfect for the weekend - get the link in my profile. PS. if you make this on Sunday, it doubles as Monday's lunch and that's going to make life better :) ... ... On a large baking sheet combine: 1 pound baby potatoes, halved if large 1/4 cup extra virgin olive oil kosher salt and black pepper Roast at 425 for 20 minutes, or until tender. Then add 4 salmon fillets and season with  1 tbs honey, 2 tsp smoked paprika, 2 tsp cumin 4 cloves garlic, juice of 1-2 lemons, + 1 pinch red pepper flakes. Return pan to oven and roast for 10 to 20 minutes more. For the goddess sauce: 1 avocado, halved 1/4 cup plain greek yogurt 1 cup fresh cilantro 1/2 cup fresh basil, plus more for serving 1 jalapeño, halved and seeded juice from 1 lemon 1 teaspoon cumin Blend everything together. Season with salt. Spread the sauce onto plates. Add brown rice, potatoes, salmon, and feta. Enjoy! #recipevideo
