With August here, I thought it would be fun to share a collection of my favorite late summer recipes, all highlighting the season’s freshest produce. We have a little over a month of summer left, so now’s the time to hit the farmers’ markets, shop the farm stands, and have fun cooking and baking with the best tomatoes, zucchini, sweet corn, and, of course, all those delicious peaches, nectarines, and berries too!
After spending the weekend in New York, I came home feeling so inspired by all the late summer produce. Walking through Tribeca and the West Village, it hit me that these August days are some of the last of summer. Seeing everyone carrying market bags overflowing with fresh produce inspired today’s roundup.
The city is full of tomatoes, zucchini, leafy greens, peaches, berries, and the prettiest summer flowers. It’s one of my favorite things about New York this time of year. I really do love being here.
There’s so much to enjoy right now, and this collection has a little bit of everything. Fresh summer salads, fun drinks, easy appetizers, summery pastas, grilled favorites, and plenty of sweet desserts too.
We still have a few great weeks of summer cooking ahead of us, so let’s make the most of them. There’s a lot to cook between now and fall!

Tomato, Peach, and Burrata Salad
Summer on a plate…simple to throw together, but so fresh and flavorful!
This chicken is made in under an hour, uses just one skillet, and is beyond delicious. It’s creamy, garlicky, packed with corn, and finished with fresh herbs and parmesan. Perfect cozy, summer dinner for any night of the week.
The crust is a mix of salty pretzels, sweet honey, and a bit of butter. The cream filling is made with four base ingredients…heavy cream, crème fraîche, vanilla, and a touch of sugar. The filling is spooned into that salty crust and topped with in-season honeyed peaches.
Soft and chewy brown butter oatmeal cookies swirled with fresh peaches and peach jam, then topped with the dreamiest brown butter vanilla icing. The perfect cookie to bake while peaches are at their sweetest!
Brown Sugar Caramel Blackberry Peach Crisp with Double the Crumble
Sweet peaches and juicy blackberries bake into a rich brown sugar caramel sauce, then get topped with double the buttery oatmeal crumble. Best served warm with vanilla ice cream!
