Itโ€™s Memorial Day weekend and summertime is here! Itโ€™s the season for icy, cold creamy desserts, chilled drinks, big salads, and so much time spent enjoying long, sun-filled days outside.

I just love summertime and Iโ€™m so excited itโ€™s here! I knew these pretty homemade popsicles would be the perfect easy recipe to share for the holiday weekend. You really do have to make these, there is no excuse, they are so simple!

When I was thinking about what to share ahead of the holiday weekend, I knew I wanted to do a frozen dessert. With this being the unofficial start of summer, nothing says summer better than ice cream!

This recipe is not actually ice cream, but this mango popsicles recipe is just as creamy and delish. I wanted a simple, vibrant recipe. And if you can believe it, you only need 3 ingredients to make these. They are totally no fuss!

This is how I make my popsicles

Step 1 โ€“ the strawberry layerย

There are two layers, strawberry, and mango. I start with the strawberry, then finish with the mango. For the strawberry mixture, I use 1 jar of my favorite strawberry jam. Then I mix in either heavy cream or canned full-fat coconut milk. Either option is delicious, but I do love the flavor the coconut milk adds.

However, if you want super creamy popsicles, use heavy cream! Simply mix the jar of strawberry jam with the cream โ€“ quick and easy. Then grab your popsicle molds and fill them up about halfway, leaving room for the mango.

Step 2 โ€“ the mango layerย

For the mango layer, use fresh or frozen chunks of mango plus cream. If you can find them, use champagne mangos. Theyโ€™re even sweeter (and prettier with a more vibrant color) than a traditional mango.

Use a blender to puree the mango chunks with water, or use pure mango or orange juice. I use mango juice, but water will work just fine too!

Next, mix with cream until creamy.

Step 3 โ€“ swirl the layers together

Pour the mango blend directly into the strawberry layer in the ice pop mold. You can use a knife to lightly swirl the layers together.

Now freeze until FROZEN. The trickiest element of this recipe is waiting for them to freeze.

Other flavor ideas

If you want to switch my recipe up a bit. Try using any flavored berry jam. Blackberry or blueberry jam paired with the mangos would be just as yummy and delicious. Pineapple would also be yummy!

Just be sure to use real fruit jam with minimal sugar and ingredients.

These popsicles are creamy, flavorful, and yummy. My family has been loving coming down to grab a healthy sweet frozen treat!

You only need 20 minutes to make these, plus freezing time. And thereโ€™s a good chance you already have everything in your kitchen right now (I know I usually do).

Happy summertime everyone!

Use a knife to gently swirl some of the strawberry up into the mango puree. If desired add a few thinly sliced strawberries or raspberries to each mold.
    3. Freeze until firm, 4 hours or overnight. Keep in the freezer until ready to eat!

    Hi there –
I love all of your recipes but for some reason my popsicles didn’t freeze. I used 2 cups of canned coconut milk and 1/4 cup heavy cream, 12 oz. strawberry jam in a jar, and 1 fresh mango. Any reason you can think of as to why mine didn’t freeze? I used a silicone popsicle mold and left them in the freezer for about 18 hours.

    Thanks!

    1. Tieghan says:

Hey Stephanie! Oh no I’m so sorry about that! Did they not freeze at all or did they just partially freeze? I would maybe leave them in the freezer a little bit longer! xT

      1. Stephanie Krein says:

They didn’t freeze at all. ๐Ÿ™
I’ll try it again. Thank you.
        Stephanie

    2. Crystal Imbrunnone says:

      Hi Tiegan,
Do you think another jam flavor, such as a triple berry or 4 berry, would work in here just as well? Or should I just stick with strawberry?

      Thanks in advance!
      Crystal

      1. Tieghan Gerard says:

        Hey Crystal,
Sure, that would also work nicely for you! I hope you love this recipe, please let me know if you give it a try!

Made with my 4 year old daughter! Our friends from Florida brought us up fresh mangos and it is strawberry pickin time in New England so it was the perfect mix sooooo yummy and easy to make.

    1. Tieghan says:

      Hey Ashley,
Fantastic!! I love to hear that this recipe was enjoyed, thanks a lot for making it! Jealous of those fresh mangos!! xx

      1. Mary says:

        Hey!

Iโ€™ve had my pops in the freezer for about 30 hours and the mango part froze, but the strawberry half isnโ€™t freezing! Do you have any suggestions of what in the world is going wrong for me?

        Thank you!

        1. Tieghan says:

That is so odd!! Hmmm is there anything you did differently? xT

Its all the sugar in the jam causing the freezing problem

  3. Sarah A. says:

Made these today and gosh, they are incredibly easy to whip up! Probably couldโ€™ve added more liquid (I used water and coconut milk) to the mangos for an easier pour, but they came out so good. Perfect summertime afternoon snack. My toddler appreciated the surprise and gobbled his up. I popped them all into individual bags for an easy grab and go treat.

    1. Tieghan says:

The strawberry part was deliciousโ€ฆthe mango part didnโ€™t have much flavor and became a lot harder than the strawberry part. Not sure whyโ€ฆI used frozen mango chunks and followed the recipe exactly as written. Love another suggestion outside of mangoโ€ฆprobably another jam!

    1. Tieghan says:

      Hi Lori,
Thanks for making these and sharing your feedback! That’s interesting to hear about the mango portion, did you use use water or mango juice? I’m wondering if that would have an affect at all. Let me know if you give them another try! xT

Just FYI you forgot to add raspberries in the ingredients and instructions (theyโ€™re in every photo though)!

    1. Tieghan says:

Thanks Sarah! The raspberries aren’t part of the recipe, they are included in step 2 if you want to add them with the strawberries, but they aren’t necessary:) Let me know if you give this recipe a try! xx
