Happy Saturday! I’m having so much fun with this year’s “spooky” cocktails. For each new drink, I’ve had a new inspiration behind the cocktail. This week’s cocktail is inspired by the magical Harry Potter series.

It’s Spooky, but whimsical at the same time – haunted, spicy, sweet, and simple.

I had plans to share another Halloween cocktail today, but this margarita just excited me way too much. It was one of those last-minute, eleventh-hour decisions that can often play out beautifully. And I couldn’t be happier I switched gears.

The details

This one is quick, which we love.

Grab fresh apple cider, tequila, orange liquor, spiced pumpkin butter, and cinnamon sugar. Shake it all up to evenly mix in that pumpkin butter.

Pour the drink into your favorite cocktail glass and top off with ginger beer. The ginger beer is the real secret to this. To me, it’s what really makes this margarita feel a little more magical than all the rest.

If you want to make a mocktail? I’ve included those steps as well! Just use extra apple cider and a splash of fresh orange juice. Just as delish.

Other than that, this is a fun, simple tequila margarita made with the addition of pumpkin butter, cider, and fizzy ginger beer.

I’d recommend testing this out this weekend, then making a double batch for Halloween. And then go for it again on Thanksgiving, you won’t be disappointed!

Instructions

  • 1. On a small plate, mix the coarse sugar, granulated sugar, cinnamon, and cayenne. Dip the rim of the glass into a thin layer of pomegranate juice. Then dip the glass into the sugar mix.
    2. Fill the glass with ice.
    3. Combine the pumpkin butter, apple cider, tequila, and orange liquor in a cocktail shaker. Shake to combine, then fill with ice and shake 1 minute. Pour into your prepared glass. Top with ginger beer and garnish with apple slices, cinnamon sticks, and a sprinkle of the cinni sugar mix.

Notes

To Make a Mocktail: omit the tequila and orange liquor. Use 2 additional tablespoons of apple cider or sparkling apple cider and mix with 1 tablespoon of orange juice.

    Made both the cocktail & mocktail yesterday and both were fantastic. My husband wasn’t too sure about the pumpkin butter and didn’t want to try initially. After the rave reviews, he caved and loved it! Making them again tonight for a quiet night watching college football.

  4. What can you substitute for ginger beer? I have guests that do not drink carbonated beverages for medical reasons, would it be ok to just omit the beer and add a splash of water?

    Tequila did not work in this recipe for me… guess I’m a purist with my margaritas 🙂 The second time I made the cocktail I used rum and it was delicious!

    Very good cocktail. Loved the little bit of cayenne on the rim to balance out the sweetness. I originally forgot to top with the ginger beer and it was a bit sweet, but was great after ginger beer was added for that sweet and spicy balance. I also made Tieghans pumpkin butter recipe for this cocktail, pretty easy and tasty. Will use the rest of the pumpkin butter for one of the pumpkin bread recipes on this site later this week!
