Switching up Thursday nights with these Folded Crispy Buffalo Chicken Wraps. Shredded chicken, buffalo sauce, herbs, lettuce, and a little cheddar cheese, all folded up in wraps, then pan-fried until warm and crispy. These easy wraps come together in minutes, they’re crunchy on the outside, and spicy and cheesy inside. Serve with the most deliciously creamy, jalapeño lime ranch, and additional buffalo sauce. Great for both lunch and dinner, but equally fun for game night too!
Look, I’m not usually one to jump on trends, especially a food trend, but this folded wrap thing that’s going around on TikTok? It’s basically a new form of a quesadilla…and it’s a pretty genius idea. Have you guys seen it? You just take a tortilla, divide up your fillings between the four quarters of the wrap, then fold it all together into a triangle.
Confused? Sorry, that probably makes no sense above, but if you look at my photos below, hopefully, you’ll understand. It is very easy!
Anyway, I’m not really on TikTok, though I probably should be, but when I saw this folded wrap concept, I instantly had the idea to create a buffalo chicken wrap. Instead of hesitating and second-guessing myself (like I always do), I just made a few to see how they might turn out. And you know, not only was it really easy to do, but it was fun. And the buffalo chicken filling sure is delicious.
So I decided I’d create the recipe here for you. Thank you TikTok for inspiring this one!
(the four corners of the wrap)
Aside from TikTok inspiring this recipe, I also drew some inspo from my younger brother, Red. He’s in town all month and he loves any food doused in a little buffalo sauce. Every time he’s here in Colorado, he begs me to make him buffalo cauliflower. It’s one of his favorite dinners.
I’m the biggest sucker when it comes to my brothers and the need to please them whenever they ask for food, especially Red. I just love when they’re excited to have me cook for them!
Since I knew Red would be around, I figured a buffalo chicken wrap was really the only way to go. It was the right move. My family devoured these. My dad said it’s all about the crispy tortillas, the cheese, and the sauces. Altogether…delicious!
(first fold)
(second fold)
(third fold)
First things first, start with the buffalo chicken. I shredded up a couple of chicken breasts and tossed them with homemade buffalo sauce, yogurt (for creaminess), and fresh herbs. Most buffalo chicken dip/fillings are made with cream cheese, but I wanted to make these wraps on the healthier side, so I swapped in yogurt. Worked just perfectly.
Once the filling is mixed, mix up a quick homemade ranch….but don’t make it your average ranch.
I used fresh cilantro and plenty of lime in place of the usual herb mix and stirred in some pickled jalapeños for a spicy, tangy kick. This is the perfect sauce to swirl into each wrap.
I took a lot of photos so you could see how this is done, but guys it’s easy. You make a cut down the center of your tortillas, then add the chicken to one corner, and the greens to another corner, and finally the cheese to another. Fold it all up, then pan-fry.
So you’ve got….
One-quarter of buffalo chicken.
Another quarter wrap of greens n’ things.
A quarter full of ranch.
And finally a quarter full of cheese.
Fold it all up into one triangle.
As the wraps cook, the cheese on the outer layer melts out a bit and the most magical thing happens. The cheese melts onto the skillet and becomes crispy and almost fried. It’s really good.
And then, everything else cooks together into a wrap that’s crispy on the outside, but cheesy and saucy inside.
The verdict? Red said he probably likes these more than buffalo chicken. They’re a mix of two of his favorite foods, buffalo chicken and quesadillas, so naturally, he loved these. As did everyone else. They’re pretty hard to beat.
Nothing fancy, just really delicious food. Excited to have this recipe on hand for an easy dinner. It’s just one of those meals that everyone loves!

SO GOOD! We used the Primal Kitchen Buffalo sauce and cooked the chicken in the crockpot all day, which I highly recommend if not in the mood to make your own and want to cut down on time. Such a good combination of flavors and textures. Highly recommend! Makes for an easy weeknight meal.

Omg this recipe is amazing! I used a pre-made ranch to cut down on time, but will definitely be making it from scratch next go around. Love love love!!!
Hi Trisha,

Great recipe, so yummy. Didn’t know what “hot sauce” the recipe was referring to so we used Sriracha and substituted garlic sautéed kale for the romaine. Probably will use Frank’s next time for more of a Buffalo taste. All round delicious meal. Thanks!
Hi Thom,
Wonderful! I really appreciate you giving this recipe a try, I love to hear that it was enjoyed!! Yes, I used Frank’s. xTieghan
These were so good, so many robust flavors and textures! After just a few bites, my husband commented these need to be made regularly. Couldn’t agree more!

Thanks Shannon!
Made this for dinner and tweaked it as I was missing some of the ingredients but omg SO GOOD. So good, I want to make it again for lunch tomorrow. I mixed iceberg lettuce, cilantro and green onions and that made it, as well as the homemade Buffalo sauce ?? Love your recipes, I have not found one I didn’t love!
Hi Hillary,
Happy Friday!! Love hearing that you enjoy this recipe, I so appreciate you giving it a try! xxT
Made these on Tuesday – my husband had two, I had one. Then Wednesday I had one for lunch, and today I just mixed up the leftovers and ate them cold without a wrap. EVERY TIME it was DELICIOUS!! I love the yogurt instead of cream cheese or any other high fat ingredients – the mix of flavors and textures makes this outstanding. No changes made, no changes suggested! Thanks, this is a keeper!
Hi Bonnie,
Happy Friday!! Love hearing that you enjoy this recipe, I so appreciate you giving it a try! xxT
Total hit! I made the buffalo sauce and would suggest limiting the olive oil. But delicious!

Hi Amy,
Thanks so much for giving this recipe a try, I love to hear that it was enjoyed! xTieghan
So good! Followed almost exactly as is except for using a bagged Tex mex shredded cheese in place of the two types of cheese. Has a great kick to it. Will make again for sure!
Hi Jan,
Thanks so much for giving this recipe a try, I love to hear that it was enjoyed! xTieghan
One of the best things I’ve made in a while! I loved the extras in the salad and the green onion really shined through. I ended up replacing the ranch with an avocado-cilantro dip that I needed to use up, but can’t wait to your sauce next time. Using the leftover buffalo sauce to make buffalo cauliflower that I saw you posed on Instagram tonight. Thanks for all the inspo!
Hi Gretchen,
Thanks so much for giving this recipe a try, I love to hear that it was enjoyed! xTieghan
Delicious! I probably stuffed them a little more than I should so they were as pretty as yours. Trying to stay on plan (you know, new year lol) so the nonfat Greek yogurt and low carb tortilla made this a good meal. One of these with baby carrots w/the jalapeño ranch to dip was filling and extremely satisfying!
Hi Debbie,
Awesome! Thanks so much for giving this recipe a try, I love to hear that it was enjoyed! xxTieghan
Is it just One cup of shredded chicken for all 4 servings ??
Hi Lauren,
Yes, that is correct. I hope you love this recipe, please let me know if you give it a try! xTieghan
Excellent recipe. Most of the cheese melted onto the skillet. The next time I will make it with thinner layers and see what happens. Great flavor and unique tastes.
