Herb Butter Baked Sweet Potato Fries. Oven baked sweet potatoes fries tossed in a garlic and herb butter. These fries are perfectly crisp and beyond addicting…SO GOOD! And the real bonus here? They’re pretty healthy too. Cool. Cool.
Every year around this time I’m reminded that people need appetizers and finger foods in their lives…in addition to breakfast, lunch, dinner, and dessert. All I ever want to share are complete meals (i.e family dinners). Not just simply an appetizer or side dish. I’ve slowly gotten better about sharing a few more appetizers, but honestly, more times than not, the only time I share appetizers and sides is leading up to the holidays (Thanksgiving is approaching!).
What can I say, I’m a creature of habit through and through.
Anyway, what I’m really trying to say is that appetizer season has begun, and I’m excited to be sharing these fries with you! These fries work great as a snack, appetizer, or side dish. Any way you serve them up, they’re going to be good.
But then, I’ve never met a sweet potato fry that I did not love. They’re carby, salty, and delicious. Especially when homemade and oven baked.
With football season now underway, and the weather slowly starting to cool, people are looking for game day recipes that are easy, delicious, and ideally, that are eaten with your hands. Plus, the slightly chillier days mean it’s finally OK to start using my oven again. YES.
I mean, I actually used my oven all summer long, but at least now you guys won’t roll your eyes in disgust (and annoyance) when I tell you that you have to turn on the oven. Alright, that’s probably a little dramatic, but I think you get what I’m saying. Or at least I hope so.
Sorry, I’m kind of rambling today. As I type this I am feeling very anxious. If you follow along on Instagram then you know we have a big photo/video shoot going on this week and there’s just a lot happening over here. It’s all so exciting and fun, but my anxious self is also full of nerves and trying to keep it all together. Surprisingly, I’m calmer than I would have suspected, so that’s good news!
And moving along…
Growing up my dad would always make oven baked fries, so I actually prefer a baked fry to a fried fry. I think baked fries have so much more flavor without all that extra breading and oil that goes along with frying. Not to mention, frying is a complete pain and I’ll only do it for things like doughnuts.
Long story short, I always bake my fries.
Ok, so let’s talk details. As you might guess, these sweet potatoes fries are pretty simple and easy, but don’t let their simplicity fool you. These are still some of the best sweet potato fries I’ve ever made.
You’ll want to start by cutting the sweet potatoes into thin matchsticks and then baking them with olive oil, herbs, and seasonings. The key to a crisp oven baked fry is not to overcrowd the baking sheet. If you have too many potatoes crowding the pan, the fries will steam instead of getting crispy. So use two baking sheets if needed. It’s better to have extra space on the baking sheet than a pan full of fries. Trust me on this.
While the fries a baking, mix up the garlic herb butter. It’s a mix of fresh garlic, basil (or parsley), and butter. Toss the hot fries with the butter, add an extra sprinkle of flaky sea salt, and done.
So simple. Very pretty (I love the color of sweet potatoes). SO GOOD.
Tossing the fries in a garlicky herb butter takes them from just ok to amazing, and gives the fries an extra special touch that makes them better than any other baked french fry out there…it’s true.
Serve these up for game day or as a healthy side dish for your next roasted chicken dinner. Or, if you’re like me, just eat a double serving and call it dinner. Sounds pretty good!

These look amazing! I love sweet potato fries and have tried making baked sweet potato fries at home a few times, but have never found a recipe that produced a sturdy, slightly crispy fry. They always turn out mushy and limp. Can’t wait to try these!
