Herb Butter Baked Sweet Potato Fries. Oven baked sweet potatoes fries tossed in a garlic and herb butter. These fries are perfectly crisp and beyond addicting…SO GOOD! And the real bonus here? They’re pretty healthy too. Cool. Cool.

Every year around this time I’m reminded that people need appetizers and finger foods in their lives…in addition to breakfast, lunch, dinner, and dessert. All I ever want to share are complete meals (i.e family dinners). Not just simply an appetizer or side dish. I’ve slowly gotten better about sharing a few more appetizers, but honestly, more times than not, the only time I share appetizers and sides is leading up to the holidays (Thanksgiving is approaching!).

What can I say, I’m a creature of habit through and through.

Anyway, what I’m really trying to say is that appetizer season has begun, and I’m excited to be sharing these fries with you! These fries work great as a snack, appetizer, or side dish. Any way you serve them up, they’re going to be good.

But then, I’ve never met a sweet potato fry that I did not love. They’re carby, salty, and delicious. Especially when homemade and oven baked.

With football season now underway, and the weather slowly starting to cool, people are looking for game day recipes that are easy, delicious, and ideally, that are eaten with your hands. Plus, the slightly chillier days mean it’s finally OK to start using my oven again. YES.

I mean, I actually used my oven all summer long, but at least now you guys won’t roll your eyes in disgust (and annoyance) when I tell you that you have to turn on the oven. Alright, that’s probably a little dramatic, but I think you get what I’m saying. Or at least I hope so.

Sorry, I’m kind of rambling today. As I type this I am feeling very anxious. If you follow along on Instagram then you know we have a big photo/video shoot going on this week and there’s just a lot happening over here. It’s all so exciting and fun, but my anxious self is also full of nerves and trying to keep it all together. Surprisingly, I’m calmer than I would have suspected, so that’s good news!

And moving along…

Growing up my dad would always make oven baked fries, so I actually prefer a baked fry to a fried fry. I think baked fries have so much more flavor without all that extra breading and oil that goes along with frying. Not to mention, frying is a complete pain and I’ll only do it for things like doughnuts.

Long story short, I always bake my fries.

Ok, so let’s talk details. As you might guess, these sweet potatoes fries are pretty simple and easy, but don’t let their simplicity fool you. These are still some of the best sweet potato fries I’ve ever made.

You’ll want to start by cutting the sweet potatoes into thin matchsticks and then baking them with olive oil, herbs, and seasonings. The key to a crisp oven baked fry is not to overcrowd the baking sheet. If you have too many potatoes crowding the pan, the fries will steam instead of getting crispy. So use two baking sheets if needed. It’s better to have extra space on the baking sheet than a pan full of fries. Trust me on this.

While the fries a baking, mix up the garlic herb butter. It’s a mix of fresh garlic, basil (or parsley), and butter. Toss the hot fries with the butter, add an extra sprinkle of flaky sea salt, and done.

So simple. Very pretty (I love the color of sweet potatoes). SO GOOD.

Tossing the fries in a garlicky herb butter takes them from just ok to amazing, and gives the fries an extra special touch that makes them better than any other baked french fry out there…it’s true.

Serve these up for game day or as a healthy side dish for your next roasted chicken dinner. Or, if you’re like me, just eat a double serving and call it dinner. Sounds pretty good!

Also, with fall just around the corner I’ve begun to crave sweet potatoes again. So many new ideas! What’s your favorite sweet potato recipe?

PS. the official start of fall is just one week from this Saturday…I am way too excited.

Instructions

  • 1, Preheat the oven to 425 degrees F.
    2. Place the sweet potatoes on a large baking sheet and toss with olive oil, thyme, sage, chili powder, and a large pinch each of salt and pepper. Spread the fries in an even layer. Do not overcrowd the pan, if needed, divide the fries between 2 baking sheets Transfer to the oven and bake for 15-20 minutes, then flip and bake for 15-20 minutes more. You want the sweet potatoes to be tender, yet crisp.
    3. Meanwhile, mix together the melted butter, garlic, parmesan, and basil (or parsley). Remove the fries from the oven and gently toss with the butter. Serve while hot. Enjoy!

Me again! Thanks to the dry herb suggestions I was able to make these last night and oh my god they were SO GOOD! We eat a lot of sweet potato fries so I am surprised to find a recipe that wowed us this much. Don’t skip the herb butter.
Thank you Tieghan for getting back to me same day with the dry herb Measurements! Love your recipes and just bought your cookbook for my MIL for Mother’s Day – selfishly I can’t wait to look at it myself!

    1. Hi Brittany! SO glad this one turned out so well for you! Thank you for trying it! Also, so not selfish in my opinion haha. I hope you both love it! xTieghan

  2. Hi!
Depressing I know but I have no fresh herbs. What quantity would you sub for dried?

    LOVE your recipes!!

    1. Hi Brittany,
I would use 1 tablespoon of dried thyme, 1/2 tablespoon of dried sage, and 1 tablespoon of basil or parsley. I hope you love the recipe, please let me know if you have any other questions! xTieghan

I made this amazing sweet potato fries today for dinner and everybody totally loved them! We will definitely make them more often. Thank you for sharing the awesome recipe with us.

    1. Hey Sarah! I don’t own an air fryer, so sadly I can’t be of much help. I am so sorry! Please let me know if you have any other questions. I hope you love this recipe! Thank you!! xTieghan

  4. Hi Tieghan, great recipe. Do you have a good conversion from the air fryer? I tried this in mine for 400 at 24 minutes, but they came out a little burnt. TIA!

    1. Hey Courtney! I actually don’t own an air fryer and have never used one, so I don’t feel comfortable advising you. So sorry I could not have been of more help! Please let me know if you have any other questions. I hope you love this recipe! Thank you!! xTieghan

  5. Hi! I love sweet potato fries, definitely plan on making these this weekend! Do you line the baking pan with anything, or do you just place the fries directly on the pan? I have been using aluminum foil when I bake frozen precut fries but they always stick unless I use Pam, which I think takes away from the crispiness.

    1. Hi! I just place the fried directly on the pan with olive oil. Please let me know if you have any other questions. I hope you love this recipe! Thank you! xTieghan

These were awesome. Cut one of the potatoes too thin and ended up burning them so that wasn’t ideal, but the other fries were so good. Definitely be sure to follow the directive on the amount of olive oil it calls for, don’t eyeball it or they will end up greasy ahead of the butter sauce being poured on. i LOVED this recipe!!!!!!!!!!!

I would ask – what do you consider overcrowding the pan? I went back and forth on how many fries to ultimately put on each baking sheet(s).

    1. Hi Catherine! I am so glad these turned out so amazing for you! Thank you for trying them! Also, I would consider it overcrowded when the fries are touching side by side or overlapping. They need some room to cook correctly. I hope this helps! xTieghan

  7. Hey! Great recipe – I have been trying to do more with sweet potatoes. I have people telling me to soak them in ice water for 20 minutes after they’re cut before baking in order to get nice and crispy. What is your thought on that? Is it not necessary for this recipe?

    Thanks!

    1. Hi Steve! I do not think that step is necessary for this recipe. Please let me know if you have any other questions. I hope you love this recipe! Thank you! xTieghan
