  • Brown Butter Brussels Sprout and Bacon Ravioli. Because Monday night just needs really GOOD and easy food. So ravioli for the win --> it's tossed in a nutty bacon pan sauce and topped with crispy Brussels sprouts (soo delicious). Every bite is a touch buttery, a little cheesy, and pretty close to perfection. Recipe link in profile.   • Cinnamon Spiced Sugar Cookies with Browned Butter Frosting. Did nothing but cook and bake all day because what else do you do on a snowy Sunday? This is an oldie, but such a goodie. The cookies are soft, sweet, hinted with cinnamon and pretty close to perfect. But the frosting? It is perfect.   • Baked (extra crispy) Sweet Potato Parmesan Tater Tots...with a drizzle of herb butter. SO GOOD. Perfect for Sunday snacking. And so EASY. And just slightly addicting.

Add 4 sweet potatoes and 1 1/2 cups water to the instant pot (or bake in the oven, directions on HBH). Cook on high pressure for 10 minutes. Quick release the steam.
Mash the potatoes with...
1 cup grated parmesan cheese
kosher salt and black pepper
1 clove garlic, gratedIn a shallow bowl combine...
2 cups Panko bread crumbs
2 teaspoons chipotle or regular chili powderScoop about 1 tbs of the sweet potato out, roll into a cylinder and place on a parchment lined baking sheet. Repeat. Roll the sweet potatoes in the crumbs to coat and place back on to the baking sheet. Lightly brush/mist each tots with olive oil. Bake at425 for 15 minutes, flip and bake another 10-15 minutes.For the butter, melt together...
4 tablespoons salted butter
2 tablespoons fresh thyme leaves
1 tablespoon chopped fresh parsley
2 teaspoons chopped fresh sageDrizzle over the taters tots. Serve with ketchup. Eat and ENJOY.  #eeeeeats #f52grams #sweetpotatoes #fallfood #recipevideo
