So I am not really all that Irish, maybe 25%. But when my oldest brother Creighton was eighteen he did a semester of school in Ireland. So he has taught me a thing or two about how they eat over there. Ah wait, what the heck am I saying, Creighton hasn’t taught me anything. He […]

Asian Grilled Salmon Pineapple and Rice Lettuce Wraps

The coolest thing just happened about five minutes ago. My next door neighbor (high Alton and Jan) just came over to tell me how great he and his wife think my blog is and that they are now fans of “Chef Tieghan”. They even gave me a hand written note! Apparently they are big foodies!

Lightened-Up Chocolate Peanut Butter Upside Down Banana Cake

I made you a cake and I flipped it up side down. And between the peanut butter in my hair (this took forever to get out), spilled milk in the fridge and ah hello, the snow (yes, it is still snowing. Sun, please come back and warm my bones!) it was the highlight of my day.

Just Like Nature Valley’s Oats ‘n Honeys Bars…..Actually they’re Better.

Oh, you guys. It has been snowing. And snowing. And then snowing some more. Really, we got a lot of snow. And to think two days ago I thought maybe spring might come a little earlier up here in the mountains. Yeah, right. Those days of awesome sunshine and 30 degrees temps were short. Too […]

Towering Flourless Chocolate Stout Cakes

Flourless cakes are the bomb. And no, I am not going all no carb on you. Trust me that could never happen at our house. I am pretty sure we consume a whole loaf of whole grain bread every morning. Oh, and then there’s Kai and his bagels. The kid loves bagels. There are definitely […]

Homemade Funfetti Sandwich Cookies with Chocolate Ganache Frosting.

K, it’s time I get on the whole sprinkles band wagon. Sprinkles were NEVER allowed in our house growing up. Sprinkles and Nerds (candies that is – not smart people, there’s actually not enough of those at our house). And not because they are pure sugar. See my mom just did not like picking sprinkles […]

[social_warfare]Did you guys have a lot of soup growing up? Cause, I don’t remember ever having soup. • Creamy Butternut Squash Alla Vodka Pasta. Because Monday night is always better with a cozy pasta. I mean, right? This is just like classic alla vodka, but minus the tomato and plus roasted butternut squash. It's creamy, warming, and finished off with salty, crispy prosciutto bread crumbs. So. Good. And since it's Monday, that's all my brain has has to say...sharing the recipe on HBH today (linked in profile) AND making this over on my stories tonight too. Get at it. #eatingfortheinsta #f52grams #instayum #butternutsquash #pasta
  • It’s officially apple season and I’m so excited to be apart of @krogerco zero hunger | zero waste campaign. The Kroger family brands are making efforts across their stores to reduce waste and even something as simple as baking with “flawed” produce can help work towards a more sustainable future. Personally? I look for the flawed produce when creating new recipes. I love the character each “flaw” adds. You’d never know I used a few bruised apples to bake this apple cider pandowdy (an apple pie, but with a lot more of a “caramel” like sauce and a crust that is beyond perfect). It’s just as sweet and delicious as it looks. Find the recipe on HBH and make sure to shop @krogerco for seasonal produce. #sponsored #zerohungerzerowaste #apples
  • Instant Pot Broccoli Cheddar and Zucchini Soup. It’s cozy, but healthier than the average broccoli cheddar soup, easy, and so delicious. Hands down this one of my favorites and it's so incredibly easy to make with an instant pot OR slow cooker. Trust me, this will become a new fall go-to. Recipe below. Get at it. Perfect Sunday night...but really any chilly night works. PS. it's better than Panera's. It's true. Slow cooker and stove top directions are on HBH (linked in profile). ..
2 tablespoons extra virgin olive oil
3 tablespoons butter
1 small yellow onion, chopped
1 carrot, chopped
2 medium zucchini, chopped
2 tablespoons fresh thyme leaves
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon cayenne, or more to taste
kosher salt and pepper
3 cups low sodium veggie or chicken broth
4 cups broccoli florets
2 bay leaves
1 cup whole milk or coconut milk
2-3 cups shredded sharp cheddar cheeseSet Instant pot to sauté. Sautè together the butter, olive oil, and onion, carrots, zucchini, thyme, nutmeg, cayenne and a large pinch each of salt and pepper for 5 minutes. Pour in the broth. Add the broccoli and bay leaves. Cook on high pressure for 8 minutes.Use the quick release and release the steam. Remove the bay leaves. Blend the soup until chunky smooth (not totally puréed). Set the Instant pot to sauté. Stir in the milk and cheese, and cook 5 minutes. Ladle the soup into bowls and top with fresh thyme...and more cheddar. Eat and enjoy.

  • Baked (extra crispy) Sweet Potato Parmesan Tater Tots. Because it's Sunday and Sunday requires all the snacks. These are some of the best --> sweet potatoes, parmesan cheese, butter, fresh herbs, plenty of flaky sea salt and black pepper. The secret? Rolling the mashed sweet potatoes in bread crumbs for a crispy on the outside, soft on the inside tater tot. Finish with a drizzle of herb butter. SO GOOD. Perfect fall appetizer, side dish, game-day snack, it all works. Shared the recipe on HBH this week - linked in profile. #eeeeeats #f52grams #sweetpotatoes #fallfood
