I’ve been keeping quiet about this pumpkin spice oatmeal latte, but now that October is here, it’s finally time to share the recipe with you guys!

I held out all September long, I didn’t share any pumpkin recipes…but now that we are two weeks into autumn, it’s time! And you guys? Let me put it this way, I have five too many pumpkin recipes to share this year. I don’t know what to do. I’m trying to space them out over the next two months, but I can’t share them all…because there is totally such a thing as too much pumpkin.

Thing is? I LOVE all pumpkiny the ideas.

Ugh. I can’t help it, fall recipes are my favorite. Please let me know in the comments what you’d like to see this month. Hoping you opinions can help me make some decisions.

Ok, and moving right along…

Ever since late last October, I’ve been dreaming about this pumpkin spice oatmeal latte. Yes, a full year ago. Here’s the thing, I first made this probably around the middle of last October, but I just never got the recipe or the photos the way I wanted to, and since neither were perfect I ended up scratching the latte because by the time November rolled around I was onto all things Thanksgiving (who’s excited…I am, but Halloween first!).

This year though, I was determined to share this fun latte recipe and I am happy to report that it is now perfected and delicious.

So, what is a pumpkin spice oatmeal latte?

Well, it’s pretty simple. Think of a pumpkin spice latte, add some oatmeal, whipped cream, and granola and you have the oatmeal version of a pumpkin spice latte…I know, kind of weird, but trust me on this.

It. Is. So. Good.

I was inspired to create this recipe by a little coffee shop in Breckenridge, Colorado, Cuppa Joe. They make an oatmeal latte that is probably one of the coziest things you could ever sip/eat on. If you’re in town visiting this fall, please go and try it for yourself. Yummm!

Their oatmeal latte kind of got me thinking, “what if I put a fall twist on this? Like um, pumpkin pie spice! yes, yes, yes, I need to do this”.

My brain, it’s weird, but at least it can come up with some pretty yummy recipes, so I got that going for me…

Anyway, once the idea was in my head, I knew it would be so good, and even though this recipe took a bit of time to perfect, it was well worth the wait.

Creating this latte is actually pretty easy. Just steam some milk with a little pumpkin, oats, pumpkin pie spice, and a splash of vanilla. Then give that milky/oaty mix a good whisk to create some foam. Then just pour into a mug, add espresso, and top with granola.

And yes, the granola is an absolute must. Again, just trust me.

You’ll want to both sip and use a spoon to consume this latte. The oats make it thick and creamy, almost like a smoothie, so it is still sipable, but you’ll be wanting a spoon for when you get down to the bottom of the mug. Those soaked oats and pieces of granola?

The best part.

And also? This is the perfect on-the go breakfast because you get your coffee and your oats all in one. Love.

So are you guys into this or what? I know the idea is a little out there, but I hope you will give it a try! It’s pretty much the perfect Tuesday treat, and that Starbucks pumpkin spice latte has nothing on this.

Lastly, I may just have a thing for creating homemade latte recipes, see this toasted coconut chocolate latte, this coconut pumpkin spice latte, and this gingerbread latte with caramel sugar (oh how I love that recipe).

  • 1. Combine the milk, pumpkin, oats, maple, pumpkin pie spice, vanilla, and salt in a medium pot and bring to a simmer, heating the mixture until it is steaming. When the mixture is steaming hot, remove it from the heat. Using a small whisk or a fork, whisk until frothy.
    2. Divide the milk mixture between 2 mugs and pour the coffee over each. Top with whipped cream and granola. Sip and use a spoon to best consume this!

  1. In the end, this is more like a cup of oatmeal with some coffee in it. The 1/2 cup of oatmeal is a large amount. I would omit the oatmeal if anyone is actually looking for a drink. This is not a drink, or a sipper. It is a spoon dish.

      You sound unfriendly, have you actually made this?!
      I did and it was delicious! Just had it for breakfast and nearly ate the whole thing by myself! I didn’t have whipped cream so just foamed up some dairy-free milk and put that on top. Perfect for this season, really warmed me up.

  4. I am head over heels about all the pumpkin recipes, I don’t mind whether you post billions of them, every single one looks so freaking good. Funny though, I made something similar. Pumpkin spice Chai tea with whipped cream cheese. I don’t like coffee, but LOVE tea, so I went for it.   5. Hi, just wondering with this recipe would it still work if you combined all the ingredients the night before apart from the coffee as like an overnight oats. Then in the morning heat in the microwave and add the cream, coffee and granola?

    This looks lovely and made me smile when I saw your photos. It’s starting to get windy and I’m really enjoying the cozy weather! I don’t think there can be too much pumpkin! I’d love to see more cozy baked goods (bread, loafs, muffins) or maybe potato dishes? Also, fall breakfasts are always nice!
