I’ve been keeping quiet about this pumpkin spice oatmeal latte, but now that October is here, it’s finally time to share the recipe with you guys!
I held out all September long, I didn’t share any pumpkin recipes…but now that we are two weeks into autumn, it’s time! And you guys? Let me put it this way, I have five too many pumpkin recipes to share this year. I don’t know what to do. I’m trying to space them out over the next two months, but I can’t share them all…because there is totally such a thing as too much pumpkin.
Thing is? I LOVE all pumpkiny the ideas.
Ugh. I can’t help it, fall recipes are my favorite. Please let me know in the comments what you’d like to see this month. Hoping you opinions can help me make some decisions.
Serious Question:Â How much pumpkin is too much? Still trying to figure this out…
Ok, and moving right along…
Ever since late last October, I’ve been dreaming about this pumpkin spice oatmeal latte. Yes, a full year ago. Here’s the thing, I first made this probably around the middle of last October, but I just never got the recipe or the photos the way I wanted to, and since neither were perfect I ended up scratching the latte because by the time November rolled around I was onto all things Thanksgiving (who’s excited…I am, but Halloween first!).
This year though, I was determined to share this fun latte recipe and I am happy to report that it is now perfected and delicious.
So, what is a pumpkin spice oatmeal latte?
Well, it’s pretty simple. Think of a pumpkin spice latte, add some oatmeal, whipped cream, and granola and you have the oatmeal version of a pumpkin spice latte…I know, kind of weird, but trust me on this.
It. Is. So. Good.
I was inspired to create this recipe by a little coffee shop in Breckenridge, Colorado, Cuppa Joe. They make an oatmeal latte that is probably one of the coziest things you could ever sip/eat on. If you’re in town visiting this fall, please go and try it for yourself. Yummm!
Their oatmeal latte kind of got me thinking, “what if I put a fall twist on this? Like um, pumpkin pie spice! yes, yes, yes, I need to do this”.
My brain, it’s weird, but at least it can come up with some pretty yummy recipes, so I got that going for me…
Anyway, once the idea was in my head, I knew it would be so good, and even though this recipe took a bit of time to perfect, it was well worth the wait.
Creating this latte is actually pretty easy. Just steam some milk with a little pumpkin, oats, pumpkin pie spice, and a splash of vanilla. Then give that milky/oaty mix a good whisk to create some foam. Then just pour into a mug, add espresso, and top with granola.
And yes, the granola is an absolute must. Again, just trust me.
You’ll want to both sip and use a spoon to consume this latte. The oats make it thick and creamy, almost like a smoothie, so it is still sipable, but you’ll be wanting a spoon for when you get down to the bottom of the mug. Those soaked oats and pieces of granola?
The best part.
And also? This is the perfect on-the go breakfast because you get your coffee and your oats all in one. Love.
So are you guys into this or what? I know the idea is a little out there, but I hope you will give it a try! It’s pretty much the perfect Tuesday treat, and that Starbucks pumpkin spice latte has nothing on this.
Nothing.
Lastly, I may just have a thing for creating homemade latte recipes, see this toasted coconut chocolate latte, this coconut pumpkin spice latte, and this gingerbread latte with caramel sugar (oh how I love that recipe).
And done. Happy Latte Tuesday!

ps. that granola on top? It’s my favorite granola recipe of all time…and it’s in my cookbook!
This looks fantastic. I can’t wait to try it — this week or weekend, I’m sure! I notice there is no sweetener (other than the whipped cream, I guess). I don’t sweeten my coffee or oatmeal too much but need a little something. Do you ever add honey or sugar to this or does the whipped cream do it? Thanks.
Hey Megan! I actually use maple in the recipe! I’d add it to your taste level. Let me know if you have other questions. Hope you love the recipe. Thank you!
Wow this looks so amazing, like beautiful Autumn in a cup! Perfect for staying nice and cozy on a gloomy and rainy day!
Yes! Completely agree. I hope you love this Lili!
Yummmy! This looks fabulous and your photos are stunning! Can’t wait to try!
Thank you Ashlyn!
You may have just inspired me to finally try oatmeal. This looks and sounds incredible!
I hope you love this! Thanks Tamar!
YUM! Sounds like the perfect way to enjoy your oatmeal and your latte at the same time!
Gorgeous photos, as always! 🙂
Thank you Emily!
Hi Tieghan, I’d like to see something where you use a raw pumpkin and roast/cook it. I’m a little intimidated by carving into a pumpkin, but I would love to try! Canned pumpkin is fine, but I’d love to try to make something (be it sweet or savory) from scracth!
Great idea! Thanks Andrea!
I’ve never heard of an oatmeal latte, but since everything I love was just put into a cup, I’ll have to give it a try 🙂 And while everything Pumpkin Spice is a win for me, if you’re looking for inspiration, the new “it” flavor seems to be maple pecan.. another wonderful combo!
Yes, that combo is so yummy! Thank you Natalie, I hope you love this!
My niece is a vegan and I located an almond creamer that was pumpkin flavor. I bought four. That should hold me for a long while and when my stock is depleted, I will experience sadness. Bring on the pumpkin recipes full force, please~!!
Haha I totally need to! Thanks Judes!
Never would have thought of oatmeal in a latte. Looks delicious though. It doesn’t take much pumpkin for me. Pumpkin bread/muffins is enough for me. HA!! Sweet potatoes is my fave over pumpkin.
Ooo love sweet potato as well! I hope you love this latte, Charlotte! Thank you!
This sounds awesome!! And no, there’s no such thing as too many pumpkin recipes – I hope you can squeeze them all in! We grew 8 different varieties of winter squash this year so we have enough for many months to come and I really appreciate some creative ideas to deal with the bounty (might you be interested, we’ve just filmed a video about the different squashes: https://youtu.be/1X2lEslMAvY) We’ve got spaghetti squash and a hubbard and a Delicata but also a naked seeded variety so I even have homegrown seeds for the granola (I immediately looked up the recipe in your book ;-))
Wow that sounds amazing! I will have to look into doing more recipes with those. Thank you Vera!
Honestly, I can never get enough pumpkin, so I wouldn’t even mind all of the recipes
? Thanks Pika!
Never too much pumpkin! I feel everyone is holding back on pumpkin this year?
I’d be interested in a few interesting savory-type recipes. Something out of the. Ordinary. Also interested in something with pears.
I love that you said that, I am loving all the pumpkin! haha. Thank you Joyce!
This is looks so goooood! I have never heard of an oatmeal latte! But from your description and photos, I think I’d love it. Will be trying this as soon as possible 🙂
I think you will, but try it and let me know! ? Thank you Kelsey!
I looks delish, I’ll grant you that. Just marked it so I can try!!

Perfect! I hope you love it!
I say there’s no such thing as too many pumpkin recipes, as long as the recipes are palatable (meaning, don’t just throw pumpkin into the mix for the heck of it, haha). This sounds wonderful!
So happy you love pumpkin recipes, because I am super into them! Thank you Liz!
