Oh my goodness, this meal is my favorite. Seriously, my favorite. There’s something I just love so much about oven-baked chicken served with rice. It’s so comforting to me. And even though it’s a more basic dinner, oven-baked chicken will always make me happy.

But you all? Add some buffalo sauce and a side of blue cheese dressing and I am sold. I think buffalo sauce is one of my all-time favorite sauces, my dad’s especially. But we all love a good buffalo chicken dinner.

Fun fact? I would make buffalo, baked up in the oven, long before I even began HBH. It’s a tried and true family staple that we all love.

When I decided I was making this, I didn’t really realize what I was making. I had just written out the recipe as a sheet pan chicken with broccoli in a spicy sauce.

It wasn’t until I was actually making the sauce that I was basically making my buffalo sauce, just with the addition of honey. So even better, right?

It turned out so, so, so yummy. Now the whole family loves this very simple sheet pan dinner!

The details

You want to start with the chicken. Cubed raw chicken, breasts or thighs, or use a mix of the two as I do. Toss the cubed chicken with a mix of seasonings: smoked paprika, onion powder, garlic powder, salt, and pepper. Add flour, then toss again.

The flour allows the chicken to get crispy in the oven. It’s a small amount, so a very light coating, but just perfect. Not a fully bready chicken, but breaded just enough so that the sauce can really stick nicely to the chicken.

Bake the chicken up with a side of broccoli. It takes maybe 20 minutes to cook.

Now the sauce. Hot sauce, Franks is my favorite. Add some salty butter and then a couple of teaspoons of seasoned salt and a pinch of black pepper. Melt this all together on the stove until just combined, Then, turn the heat off and mix in the honey.

The honey makes this buffalo sauce so special. The lightest bit of sweetness. Pour the sauce over the baked, crispy chicken and cook the chicken in the sauce. What happens is that the coating soaks up all the sauce – wow, so delish.

  • 1. Preheat the oven to 450° F. Line a baking sheet with parchment paper or rub with oil.
    2. On the sheet pan, toss together the chicken, paprika, onion powder, garlic powder, salt, and pepper. Add the flour and toss again. Add 2 tablespoons olive oil, tossing to coat. Arrange the chicken to one side of the baking sheet. Add the broccoli to the other side. Toss with olive oil, salt, and pepper. Bake 15-20 minutes until the chicken is cooked through.
    3. Meanwhile, make the sauce. In a saucepan set over medium heat, melt together the hot sauce, butter, seasoned salt, and cayenne. Stir until melted and combined. Remove from the heat and mix in the honey.
    4. Remove the broccoli from the sheet pan. Then pour the buffalo sauce over the chicken, toss the chicken up in the sauce. Bake another 5 minutes, until the buffalo sauce is baked onto the chicken.
    5. Serve the chicken, broccoli, and buffalo sauce with green onions and blue cheese or ranch dressing. I love this over rice, but it's also great with french fries too!

    Oh yes – this was so stinking tasty! I put it on a bed of Right Rice – I think regular white rice would’ve been better, but wanted to try and add a little more vegetable. The chicken was so juicy and tender, I have never made chicken that good before! Thank you!

    It came out just like your picture! Everyone loved it. It had more heat than I e pe Ted but I heated the Buffalo sauce and butter with the honey. I’m wondering if that would have made a diff?!

    Absolutely delicious! The chicken was so tender and flavourful! The sauce was so yummy! Super quick and easy meal. I will definitely make this again. My husband loved it, too!

  7. Made this and cut all ingredients by half for two of us. I was concerned it might be too spicy for me but it was fine with the Frank’s. However, we found the sauce to be very salty. For half the recipe I probably added about 1/3 teaspoon of (Lawry’s) seasoned salt…or a scant 1/2 teaspoon. Next time I’ll likely add that to the full recipe.

    So good! Very easy to come together when I have two littles running between my legs at the end of a long day. I used gluten free flour and subbed ghee in place of the butter, and it turned out delicious! I ate the chicken and broccoli with a side of mashed sweet potato, and it paired well with the hot honey sauce drizzled over the top. Will be making again!

    SO GOOD!
    If you’re a baby with spice (me!) it’s important to note that the honey & butter makes the buffalo hotter, not tamer. But it’s not insanely spicy, the flavour is FANTASTIC, and this is the only way I’m cooking chicken from now on.

    The idea and ingredients were good, but I just didn’t care for the chicken, although my husband thought it was OK. I think the sauce was fine, even though I had my doubts, and I even put some of it on the broccoli, but there was just too much spice on the chicken, which made it sort of bitter to me. If I make it again I would cut the spice by half, and then I think it would be fine.

    This was gobbled up by family last night. The buffalo flavor paired well with the simply seasoned broccoli. I tossed my chicken with its ingredients in a separate bowl then laid out on the sheet pan — I know, why add in unnecessary dishes?! — but I just feel I get a better mix that way. I cheated w/ Sweet Baby Ray’s buffalo sauce due to ingredients on hand, but adding in the honey was a nice touch. (I’ll definitely be trying out your version another night!). My chicken didn’t end up with as thick a coating like your photos and didn’t truly “soak up” the sauce (I even put it under broil for a few min. at the end), but it all still tasted great! I paired the chicken & broccoli with air-fried baby potatoes instead of fries or rice. Overall a solid hit and I’ll add it to my rotation for healthier meals that are easy to prep! Thanks again!
