Asher has been complaining that I never make chocolate desserts anymore. And while that’s obviously not true, I have definitely slowed with the overly sweet chocolate desserts. I’ve been putting a little more focus on lighter summer dessert recipes – I just make what we’re craving.

And ever since my mom has mostly stopped eating added sugar, I’ve been more conscious of creating low-sugar sweet recipes. That means that fruit-based options and a good amount of vegan chocolate desserts have been higher on my to-make list.

Asher doesn’t love it, but I’m all about it, as is my mom.

Point is, there’s been a lack of sweet chocolate desserts around. While I was hiking, I was randomly thinking about dessert recipes and fun frozen recipes I could share with you all. I have so many ideas for ice and fruit-based sweets this summer – and I’m surely embracing both. But then this idea floated into my head.

Chocolate-covered frozen bananas with an assortment of yummy toppings, plus a little sprinkle of sea salt on top.

I knew it wasn’t a concept that hadn’t been done before. But it was one I personally just wanted to make and enjoy. So here we are. This is much more of an idea than a hardcore recipe. Regardless, these fun bites are the simplest to make and so freaking delicious.

Details

You really just need 3 ingredients – bananas, chocolate, and coconut oil. Whatever toppings you choose is up to you!

I start by slicing bananas into slices, then arrange them on a parchment-lined baking. I add toppings to each slice, then freeze for a bit. This step probably is not necessary, but I find working with semi-frozen slices to be easier and much less messy.

While the slices freeze I melt lots of chocolate with coconut oil and line a cupcake mold with paper liners. You can use a mini mold or a regular mold, but I prefer the mini if you have that size!

When ready, I add a small amount of chocolate to each paper cupcake liner and then the frozen banana slice. Then pour the chocolate overtop to mostly cover the slice. The amount of chocolate will really vary depending on how little or big you’ve made each slice of banana.

My best tip is to try not to overload the banana slices with toppings. I know it’s tempting, but if you pile on too many toppings, things just get messy.

Lastly, freeze until totally frozen. See, easy, and honestly fun to make too.

The toppings

These are the fun part. There are so many combinations you can and should do!

– assorted nut butters
– jam + cherry or raspberry on top
– peanuts + honey
– cinnamon sugar
– honey + toasted coconut
– peanut butter + pretzels
– pistachios + honey
– instant coffee/espresso powder + toasted hazelnuts
– honey + sea salt
– roasted nuts/seeds
– jam + coconut

I mean, I could go onand on! But even bananas + chocolate + sea salt are delicious. Though in my book, a drizzle of honey makes that combo even better.

Our favorite? Obviously chocolate, banana, peanut butter, honey, and sea salt. Like a peanut butter cup, but better because the frozen banana tastes like vanilla ice cream.

So yummy. Take my word, you’re going to LOVE these!

Instructions

  • 1. Cut the bananas into slices, then arrange on a parchment-lined baking.
    2. Add toppings to each slice. Don't overload the slices. Arrange on a parchment-lined baking sheet. Freeze 20 minutes.
    3. Meanwhile, line a mini or regular cupcake mold with paper liners. Melt the chocolate and coconut oil together in a bowl in the microwave. Heat on 30-second intervals until melted. Drop 2 teaspoons of melted chocolate into each liner. Add the frozen banana slices, it's ok if they're popping out of the mini pan. Pour over the melted chocolate to mostly cover the bananas. Sprinkle with flaky sea salt.
    4. Freeze until completely frozen, about 2 hours. Remove from the freezer, let sit 2-3 minutes. Eat and ENJOY!

I love an easy sweet treat recipe! I used my mini muffin tins and they were perfect sized. Half the batch was banana and honey, which was a little extra sweet for my liking, and the other half I paired with homemade blackberry chia seed jam. Then I burnt the coconut in the oven, so only a few actually were topped with toasted coconut. Easy and delicious, these would be great for a party too!

These turned out even better than I expected!

I had almond butter and honey on hand, so I did some just almond butter, some just honey, and some with both. And sea salt on everything of course.

My only suggestion would be to have some extra chocolate on hand – I ran out just filling the liners before even putting the bananas in! 🙂 Next time – I’ll be sure to have some on hand as well as start off more sparingly.

As I was putting my ingredients away, I realized I had caramel I could’ve used too! Guess I’ll need to make more. 🙂

    1. Hey Liz,

  3. How long can you keep them in the freezer before eating? Melting the chocolate is always a problem, so make sure I chop my 100% chocolate add the oil and how long in the microwave. Thxs

  5. Where in the world do you find flaky sea salt?! I feel like I’ve looked all over and can’t find it but know it would MAKE this recipe!

    1. Hey Lauren,

Oh wow these look great and thank you for sharing. I am definitely going to make some this week. For anyone who does not like banana, I guess that you can use an alternative fruit, i.e., strawberry, apple or pineapple?
My brain is already spinning with topping ideas haha. A really good thirst quencher for a hot day could be frozen pineapple covered in chocolate with a sprinkling of chilli powder 🙂

    1. Hey Colleen,
Thanks so much for your kind message! Sure, any fruit you like would work:) Let me know if you give them a try! xTieghan
