I wish I could make you these cookie. Actually, I wish I could make you dozens of these cookies.
These are the kind of cookie you make if you need to bribe someone into doing something or if you need to get out of something or if you screwed up horribly and need a really good way to apologize.
Oh yes, these are definitely that cookie.
I actually thought for like a millisecond about using these cookies to get out of jury duty.
Ah huh, jury duty. The letter came in the mail maybe two weeks ago and it is a rather large miracle that I have not complained about having to do jury duty EVERYDAY on here for the past two weeks. Really, I don’t know how I didn’t because pretty much everyone who has crossed my path knows how much I was dreading doing jury duty.
Obviously, I am not a good citizen and obviously, cookies no matter how good, will not get me out of jury duty.
Today, when I was hiking and talking to my mom on the phone she said that I better call and make sure that my jury duty was a one day thing since I am heading out-of-town for that big twenty-six family members vacay I was telling you guys about a few days ago.
So I got home and called, stressed that they were going to say, “I’m sorry, but this is a five-day trial and you are going to have to be here for all five days in court. Court starts on Monday and you won’t be able to leave until Saturday morning”.
I got an answering machine……
Sent down from heaven.
Okay, that is a little dramatic, but man I wanted to give that little answering machine a giant bear hug. Like biggest one you can think of. A big, big , big bear hug!
Why?
Because it said exactly this, ” All Jury trials are proceeding with the exception of Thursday June 6th and Monday June 17th, both of which have been canceled.” My trial was Monday June 17th.
Canceled!
I know, I am so over dramatic.
I just do not like the idea of being on a trial. It totally freaks me out. Plus, I am not sure whoever was on trial would get a fair trial with me. I think I’d be so weirded out that my brain would just play along with everyone else. Which is so not fair. Really, the government does not want me as a juror. I rather bake everyone cookies and call it a day.
After all, everybody needs a cookie every now and then. Sounds like a perfect way to serve my country to me!
Especially with these cookies.
Burnt peanut butter caramel! Oh yes, it is a real thing and it is delicious. It’s actually out of this world, and this is me NOT being dramatic. This is me being dead on serious. It really is out of this world. Plus, the caramel is stuffed inside the best oatmeal chocolate chip cookies around. At least in my opinion and the opinion of my mom, dad and everyone else who has ever tried these oatmeal cookies. My mom has been using the recipe forever, she got it from her longtime friend Lora. So naturally this whole cookie is out of this world.
The burnt peanut butter caramel is actually really simple to make and stiffens up so quick in the freezer. They stiffen, but don’t get hard which I personally like. Then comes the tricky part, stuffing the caramel. This oatmeal cookie recipe is a really crumbly dough, which I know sounds bad, but I promise they turn out to be the best cookies. The tricky part is forming the dough around the caramel. You really have to squeeze the dough around them and just keep clumping it together until it holds as a tight ball. Seriously, don’t fret if you feel like it is too crumbly. I promise the dough balls will form!
Then just bake and go to town. Actually maybe wait five minutes, because that caramel is HOT. Trust me I think my tongue is still feeling the burn. I’d still do it all over again though, the whole waiting five minutes thing is pretty much not an option over here.

I’ve been on jury duty twice. Both times it was an interesting experience, I actually liked it. If I wasn’t so busy these days, I’d do it again.
