AKA peanut butter cookie dough, buckeye fudge ice cream…aka THE BEST!

I figured that since it’s the unofficial last Friday of summer, we’d better go out with a bang… and by that I mean something chocolatey and semi-over the top.

DUH.

I honestly cannot believe that Labor Day is on Monday. How is summer over? It’s so crazy to me how fast time is literally just flying by. Are you guys ready for summer to be over and to welcome the crisp fall air? I know that for a ton of you it’s still very hot where you live, SO I am clearly hoping that ice cream is going to continue to be a staple in your diet?

Wait, who am I kidding, ice cream is staple any time of the year. It’s just too good to not eat year-long. <– truth.

OKok, so as some of you may know, I grew up in Cleveland, Ohio. All of my extended family and my oldest brother, Creighton still live there. My family travels back at least two or three times a year to visit. For as much as I love Colorado, I will always think of myself as a Cleveland girl. Something about that place will always be home for me. I mean, don’t get me wrong, I’m pretty sure I could never live there full-time again (it’s the weather…especially the winter…brutal…I just can’t), but for some reason Cleveland is still what I consider home, home.

Like does that make any sense at all?

Obviously home for me is Colorado, in my little ole barn with my mean old rooster behind it… and my goaty, goats on the side. But I also think of Cleveland as home too. Even though I’m probably making zero sense right now, I’m hoping that some of you may understand what I’m trying to say. It’s kind of like when you live in another state and you go home to stay with your parents. That kind of thing.

The point in this rambling is that I grew up in Cleveland cheering on the Browns and eating Buckeyes all autumn long. Ok, well I don’t actually think I’ve ever cheered on anyone at a sporting event, BUT I’ve gladly eaten the foods/treats that go along with the games!

OH wait, but I totally cheered on my younger brother Red when I watched him compete last Christmas at the Dew Tour (and on TV when he competed at the US Open). I even physically went to the Dew Tour (it was right in town after all)… that’s gotta count for something right?

Anyway, back the point, football starts this Thursday and in my mind, that means buckeye season! And no, not the buckeyes you find on the ground in Ohio.

NO WAY. I’m talking the chocolate covered peanut butter buckeye balls.

YESSSS.

They will forever be one of my all time favorite desserts. Love them! A couple years ago I created these healthy harvest buckeyes and the year before that I created the ultimate buckeye cake, and this year?

Ice cream!!  To be exact, no-churn chocolate ice cream, complete with peanut butter cookie dough bits and a chocolate fudge swirl. I honestly cannot think of an ice cream I could love more. This has all my favorite things and it’s so simple and easy. Gotta love when there’s no egg yolks or even ice cream makers involved!

So here’s how this works…

…start with your ice cream base of heavy cream, sweetened condensed milk, cocoa powder and vanilla

…add you peanut butter balls

…then swirl in your chocolate fudge

…freeze

…scoop

…EAT!

yum, yum and YUM.

The only downside to this ice cream is that for some reason it’s a little tricky to scoop. I had the hardest time photographing it because I just could not get those perfectly rounded scoops. The chunks of peanut butter and fudge are totally to blame, but who really cares when the ice cream is this good??

Alright, so here’s what I’m thinking. Make this cream over the weekend for you Labor Day festivities, but double the batch. Then serve it up again on Thursday for the kick off to football season!

Buckeye Fudge Ice Cream.

Ingredients

Instructions

  • Add the heavy cream, 7 ounces (about half the can) sweetened condensed milk, cocoa powder and vanilla to the bowl of a stand mixer fitted with the whisk attachment (or use a hand held electric mixer). Whip until stiff peaks form.
  • Combine the remaining sweetened condensed milk and the chocolate chips in a microwave safe bowl and microwave on power level high for 30 seconds intervals, stirring after each interval until melted and smooth.
  • Stir in a pinch of salt.
  • In a separate mixing bowl, beat together the peanut butter, butter, and powdered sugar until smooth. Roll the peanut butter mix into small marble size balls and then carefully stir them into the ice cream. You may not need to use all the peanut butter. Now gently swirl in the fudge sauce.
  • Spoon the ice cream into a freezer safe container and freeze 4-6 hours or overnight.

  1. Yup, this looks so sinfully good, T! I like buckeyes because peanut butter and chocolate just goes together. And I love the no churn ice cream, perfect for people like me who have no ice cream maker, also, it is very dangerously easy! lol In fact, I just made 1 with peaches yesterday. And since I love chocolate, I will definitely try this! Great job as always! 😉
