Easy Blueberry Ginger Cookie Cobbler. This is your classic, old-fashioned cobbler—with a deliciously unexpected twist. Summer blueberries baked beneath a soft, chewy brown sugar cookie topping with hints of molasses and warm ginger. It’s like a gingery blueberry cookie in cobbler form—and when served warm with vanilla ice cream or a dollop of whipped cream, it’s completely delicious.

I am so excited to share this one with you. I’ve been testing the recipe over the past month—between travel and stormy summer weather, it took a little time for this cobbler to fully come to life. But once it did… it became something really special.

At first, I started with my go-to cinnamon-spiced topping. It was delicious, but I kept feeling like it needed something more. Then it hit me—molasses and ginger! The combo adds just the right amount of moisture, depth, and that cozy, spiced cookie flavor we all love in a gingerbread or snack cookie.

Mix in warm, jammy blueberries, and the result is something a little different—but so delicious. It’s simple to make, cozy but summery, and such a fun twist on a classic. Trust me, you have to try this one!

Steps

Step 1: Melt the butter

Preheat the oven to 375°F. While it’s heating, place a stick of butter in a 9×13-inch baking dish (or something similar in size) and set it in the oven to melt. Keep an eye on it so the butter doesn’t burn—just melt until fully liquid and golden.

Step 2: Mix the batter

While the butter melts, whisk together the flour, baking powder, ground ginger, cinnamon, and a pinch of salt.
Stir in the brown sugar, molasses (trust me on this one!), vanilla, and milk. Mix until just combined. The batter should be pourable—similar to thick pancake batter. If needed, add a splash of milk to loosen it slightly.

Step 3: Prep the berries

In a bowl, toss the fresh blueberries with brown sugar and a couple tablespoons of flour. This helps thicken the filling as it bakes and makes the berries jammy and sweet.

Step 4: Assemble and bake

Pour the batter evenly over the melted butter in the baking dish. Do not stir! Spoon the sugared blueberries over the batter. As the cobbler bakes, the batter will rise up around the fruit, creating a golden, cookie-like crust.
Bake for 40–45 minutes, until the top is set and golden and the berries are bubbling around the edges. Your kitchen will smell incredible!

Step 5: Serve and enjoy

Let the cobbler cool for 10–15 minutes, then serve warm with scoops of vanilla ice cream or freshly whipped cream. It’s cozy, nostalgic, and dangerously delicious. The brown sugar ginger cookie topping is truly what makes this cobbler extra special—and totally addicting!

Hi Wendy! Yes, this cobbler would work great as individual portions in ramekins! Just divide the batter and blueberry mixture evenly into greased ramekins and bake them until golden and bubbly. It would be such a perfect breakfast treat for your B&B guests! Thanks so much for the kind words! xT

Made this twice already. Once for our family reunion last week and once to bring to church for the coffee table! Huge hit, everyone loved it! I like to sprinkle turbinado sugar on top part way threw baking for a little extra sparkle. Great recipe!

I have this lovely dessert in the oven now. Just a couple of questions. There are 2 different times: 40-45, and 50-55. Maybe just watch it?
Also when you add the flour to the berries is it from the 1 1/4 cup or additional? Same with the brown sugar. From the 1 cup or additional?
Thanks for all your great recipes. Love them all and have all your books. You keep me inspired!
    Can’t wait to taste this!
    Melinda

    1. Tieghan Gerard says:

Hi Melinda! So happy you’re making this, hope your kitchen is smelling amazing! 😊

For the bake time, yes, I’d recommend keeping an eye on it around the 40-minute mark. You want the topping to be golden and the berries bubbling—some ovens just run a little hotter or cooler, so it’s always good to watch closely near the end.

As for the flour and brown sugar added to the berries, those are separate from the amounts listed for the cookie topping. So you’ll use additional flour and brown sugar just for tossing with the berries.

Thank you so much for your sweet words and support, it truly means the world. I hope you love the cobbler! xT

I baked this in a 9×13 Pyrex and it looked great. I had just-picked blackberries and used those. I subbed buttermilk for the milk and swapped a bit of the baking powder for baking soda. I think we prefer a standard butter/vanilla type cobbler top, but this was a solid recipe and we enjoyed trying something different. Thank you!

    1. Tieghan Gerard says:

Hey Joi! Wow, thank you SO much!! So so glad you loved this cobbler! xT

  11. Dina Schlack says:

This turned out so oily, I think the recipe has way too much butter. It collapsed shortly after pulling it out of the oven, which is not standard for any cobbler I’ve made before.

    1. Tieghan Gerard says:

Oh no I’m so sorry about that! Thank you for the input, I really appreciate it! Have a great summer! xT

  14. Jenny B says:

This was AMAZING! and so easy to halve the recipe. I’m honestly glad I didn’t make more because I would have eaten more of it.

Thank you SO much Jenny! I’m so glad you loved this cobbler, have an amazing summer! 🙂 xT

  15. Karina says:

Hi can you substitute a non dairy milk for the same result or is the measurement different?

    1. Tieghan Gerard says:

Hi Karina! Yes, you can definitely use a non dairy milk for this recipe! Hope you love it! 🙂 xT
