I’m not going to lie, if you give me the option between frozen yogurt and ice cream? I’m going to pick ice cream every single time. I’ve never understood the frozen yogurt craze. I guess I understand it some like it because it’s “healthier”. But it still has about the same amount of sugar as ice cream.

So, if I am having something creamy and frozen, it’s going to be ice cream. That’s just me.

Frozen yogurt bark however is different. For one, this isn’t anything like ice cream. Instead, it’s a delicious frozen yogurt snack that has some crunch to it, which I think is delicious.

When I was thinking up back-to-school recipes, I wanted them to be as simple as possible. I wanted them to be fun. And of course, I wanted them to be delicious.

I have so many ideas, but this has been in the back of my head since summer first began. I love to make chocolate bark over the holidays, so a frozen yogurt bark really interested me.

I loved that I could make it very, very low in sugar and top it with one of my favorite flavors, blackberry vanilla.

Here are the details

When I say this is easy, I really do mean it.

Just 6 ingredients, plain Greek yogurt, vanilla, jam, blackberries, and then 2 optional ingredients, white chocolate, and brown rice crisp cereal. I say they’re optional only because you don’t have to have them. But adding them is delicious, so I would not skip.

Simply mix the yogurt and vanilla. Add a tiny amount of water to thin the yogurt, then spread it into a blob on a parchment-lined baking sheet.

Swirl in the jam, add the berries, then top with melted white chocolate and brown rice crisp cereal.

Then FREEZE, that’s it!

Clearly, this is very customizable. Don’t love blackberries? Just use blueberries, strawberries, or even mango or pineapple. The options really are endless, you can’t mess this up!

Most importantly, this frozen bark is delicious. It’s a healthier snack that everyone will enjoy! Just be sure to find a great high-quality jam. I LOVE The Little Market jams.

  • 1. Line a baking sheet with parchment paper.
    2. Stir the yogurt and vanilla in a bowl. Add 1/4 cup to 1/2 cup cold water to thin the yogurt out a little. Spread onto the prepared baking sheet in a thin layer. Add dollops of the jam, gently swirling into the yogurt. Scatter the blackberries on top. Drizzle over the white chocolate, then sprinkle on the brown rice crisp cereal.
    3. Freeze until very firm, at least 3 hours. Beak into pieces. Keep in the freezer.

Notes

Switch it Up: feel fruit to use your favorite jam and berries, it doesn’t have to be blackberry!

    This was good! I made a strawberry version. I wish I had used a bit more jam and sweetened the yogurt slightly with honey or maple syrup. My 5 year old daughter thought it was too sour (she’s extremely picky). I’ll try this again and will also use milk/dark chocolate instead of white (only because she will think she likes it more lol). Can’t wait to try it again.

    I was so excited to try this (my first recipe to try from your beautiful site). But I’m sorry to report that I didn’t love this recipe. I’m thinking that adding water to the yogurt was the problem. But I AM going to try making it again without any water and adding something to sweeten the yogurt a bit overall (for my picky kids). If this improves, which I think it will, I will leave a better rating and review!

  3. Hi! This recipe is delicious! A sheet pan would not fit in my freezer so I used 2 x 10″ circle cake pans and 1 square cake pan so they would stack easily in my narrow freezer. This also gave me the opportunity to try out different flavor combos, so I did one with lemon curd and blueberries and 2 with cherry jam and raspberries because that’s the fruit that looked the best at the grocery store. Super yum and I love the texture and tang. Thanks for the recipe!

    Just had a piece of bark and it’s delicious! . I used fresh raspberries, a combination of raspberry and cherry jam and since I had no rice crispies I used cornflakes. I also used 70% dark chocolate since I ran out of white.
    This recipe is so easy and the flavour combinations are endless. Thanks for sharing!❤️
