Oh um, hi! I have the bestest recipe to share today!
Like the BEST. Custard. Waffle French Toast. Gingerbread…ALL IN ONE.
So much to love. Thank God it’s Friday so we can all make this Baked Gingerbread Custard Waffle French Toast for breakfast this weekend. Yesss!
I’ve been dying to share this recipe with you guys for the longest time. I am so pumped the day is finally here and that I have a fun/crazy/cheery video to go along with it!
But first can we talk about serious things?
Serious things like molasses dumped all over my pantry shelves. Plus other things like Red’s Backyard.
UGH. Mice and brothers!
Yeah, mice… the mice are back. Double UGH.
So let’s start with the mice and the molasses. You know, I love molasses, I should really use it more often. Not only does it MAKE these waffles into gingerbread perfection, but it’s good for so many other recipes too. AND I believe there are many health benefits as well! What molasses is good for you?? Well maybe my little mouse figured that out too and decided he wanted to try some, because sometime in the middle of the night he tipped over a bottle causing it to leak out EVERYWHERE. Yep, this little mouse somehow managed to knock the honey onto the floor and tip over my sealed jar of molasses. Well, I guess it wasn’t really “sealed”, because it dripped down between three different shelves and made one giant mess.
My little cat, NEEDS to get on this mouse situation ASAP. Just sayin.
So yesterday, my 15-year-old brother Red, who lives the most amazing life any kid could possibly dream of, and his snowboard buddies stopped in for their four o’clock chocolate chip buttermilk waffles stop. You see, my brothers…and Blake (aka the kid who’s always around + his cat, Benny) turned the backyard into a mini snowboard park again (#redsbackyard). It’s full of rails, jumps…and a homemade, 100% hillbilly tow rope. Oh my gosh, you walk outside my front door and um, there are giant jumps, rails and a tow rope! Geez, this tow rope, it’s completely Gerard family style, but yet genius? The boys took apart the family’s 1999 Honda 50 dirt bike, took the back wheel off, added a rope and somehow manage to turn it into a homemade tow rope. And you guys? The thing like REALLY works! Red had pretty much the entire U.S Snowboard team over here on Wednesday. They rode that park all day long and then, yup, managed to stumble into my little barn and talk me into making them waffles. Red knows how to sweet talk me…as does Kai, and most of their friends. Man, these little brothers! The older brothers just can’t “sweet talk” like the younger ones can. What gives?
Unfortunately, their little “visit” caused me to miss my last thirty minutes of daylight to shoot photos?!? My sweet little Christmas treats had to wait until morning to be photographed. 🙁
I’m turning into a sucker, or maybe it’s just cause it is December and I’m feeling extra jolly. I dunno.
So anyway, those are my stories for the day. I promise no more.
Let’s talk waffles!!
Gingerbread waffles!! With eggy custard baked into them. YUMMMM! These waffles are everything, think french toast bake, but on another level. You start out by making fresh homemade gingerbread waffles. I mean, these waffles alone are crazy awesome. But then you pour an eggy vanilla custard all over them and bake them just like you would a french toast bake. It’s just kind of amazing, that’s really all I have to say.
Well, I clearly have lots to say, but you know, that’s all I should say.
This is the ULTIMATE Christmas breakfast or brunch. You can prepare it ahead of time and let the dish sit overnight in the fridge. Then, you can choose to bake as single waffles so you can stack them like I did, OR, you can just bake the waffles in a 9×13″ pan like you would a french toast casserole. Any method you choose will be delicious!!
Once the waffles come out of the oven all they need is a pat of butter, a dollop of whip cream and a generous drizzle of maple syrup.
Obviously.
And then EAT.

So when I first read the title, I thought do we really need to make french toast out of a waffle? I wondered what this concoction was going to look like…. And then I saw the photos…. and thought, YES! Yes, we must make french toast out of our waffles! These look ridiculously good! Brilliant idea!

i love the idea of baking custard into a waffle; it’s like baked french toast/bread pudding waffles, which sounds like one of the best things ever. asher picking at the waffles is so cute! and i was so surprised that the baked waffles came off the pan so easily- that itself seemed magical.
