Gingered Peach Bourbon Thyme Smash | halfbakedharvest.com @hbharvest

Gingered. Peach. Bourbon. Thyme. Smash.

I mean, I mean?! Come on, how good does that sound? It feels so southern, right? Loving it!

Speaking of feeling southern, guys, Iโ€™m in a southern kind of mood. I think itโ€™s the time of year, I am loving all of these beautiful peaches, tomatoes, and corn that seem to be surrounding me. These special fruits and veggies in particular always make me think of southern delicacies (hello to this sandwich, this salad, and these shortcakes)โ€ฆIโ€™m certainly not complaining though!

OKAY! First, happy Saturday to everyone. Glad to be back today for another fun cocktail Saturday post. Iโ€™ve had this drink in my back pocket for quite a while now, so Iโ€™m pretty excited to be sharing it with you guys today. This feels like late summer in a cocktail glass. The fresh peach slices are the perfect ripeness during these mid August days and Iโ€™m trying my hardest to incorporate ripe peaches into pretty much everythingโ€ฆok I donโ€™t really need to try very hard, using slices of fresh peach in everything is a pretty easy task for me.

Anyway, this fun peachy bourbon drink is my new obsession. Iโ€™ve been making them weekly on Friday nights for friends and family and everyone loves them. Like LOVES them.

These drinks are slightly sweet, hinted just lightly with thyme, and kicked up with a little ginger and fizz action from my favorite drink topper, ginger beer.

The best part? These drinks could not be easier or quicker to makeโ€ฆitโ€™s maybe even a little scary how fast they can be madeโ€ฆ

โ€“> muddle fresh peaches with some thyme sprig, honey, and lemon juice.

โ€“> add a splashโ€ฆ(or two) of bourbon.

โ€“> fill your glass with ice and then add that muddled peachy mixture goodness.

โ€“> top with ginger beer.

Drink up!

You see? dangerous!

Hope youโ€™re all having a great Saturday! See you back here tomorrow for a Nine Favorite Things post.

Until thenโ€ฆ

Love the drinks and recipes! And gotta ask, where did you get this drinkware? I know you’ve had it a long time (seen previous drinks), but just wanted to ask.

Made this drink over the weekend and it was a hit! It’s the perfect blend of all the flavors- peaches, ginger, lemon & thyme. I used Black Feather bourbon whiskey and it was so good!

OK…as mentioned in previous post, on staycation and this cocktail was on bucket list to do up a fun mixology action for cocktail hour and some nibbles ahead of the dinner hour. Given I got peaches for the chicken/peach dinner, I got some for this cocktail…
Fun one…did put in all the peach muddle into the drink to really get the peachness.
Neat combo…and thyme is such a great fresh herb..keep up the good work in showcasing the fresh herbs – so easy to grow and have right available.
(as is fresh sage…so underrated…great great great fresh herb- use it alot.)

Thanks mucho for this fun cocktail!
