Blackberry Lavender White Chocolate Clafoutis | halfbakedharvest.com @hbharvest

This blackberry lavender white chocolate clafoutis is high on my list of weekend activities and I am going to try to convince you to make it high on yours too!

But first, happiest Friday everyone! I feel like Iโ€™ve been in go mode all week, so I have to say that Iโ€™m pretty excited for the weekend. Although itโ€™s kind of a busy weekend ahead, as weโ€™re filming new recipe videos for the site on both Saturday and Sunday. However, on Sunday night I have a fun dinner to head to in Boulder. So all good thingsโ€ฆonly a little bit crazy!

Question, did anyone elseโ€™s week feel like a complete blur? Because that was totally my week, which is not really a bad thing, but man, time should really just slow down. Good news is that I have so many fun things to share with you all, keeping it all hush, hush for the moment, but soon enough I will let you guys in on everything thatโ€™s been happening behind the scenes!!

Since Iโ€™m basically dying to tell you everything, let me give you all a few hints. Theย cookbook is involved, thereโ€™s possibly some fun design stuff incorporated, a little bit of barn talk, and HBH may or may not be getting a whole new look sometime very soonโ€ฆ

More to comeโ€ฆmwahahaha.

In the meantime, we have very sweet, summery dessert things to chat about today!

Yeah, yum, and yes, please!

Okay, so have you guys heard of a clafoutis? A couple of summers ago I posted a funย raspberry, nectarine and sweet corn clafoutis on the site, but todayโ€™s clafoutis has won my heart over. Itโ€™s sweet, simple, and loaded to the brim with blackberries, which are definitely one of my favorite berries!

Plus the combo of blackberries, lavender, and white chocolate? Well, itโ€™s pretty much perfection. I did this combo with my very first scone recipe last year and ever since then Iโ€™ve been obsessed with combining these three ingredients. Itโ€™s one of my favorites for sure.

Not going to lie though, originally this was supposed to be some kind of cake, but then I sent a quick text to my mom giving her the option of cake verses an eggyย clafoutis and she immediately came back at me saying theย clafoutis was totally the way to go. Instead of going back and forth like I normally would, I just decided to listen to her (for once, I tend to ask her opinion and then sway my own wayโ€ฆoooops) and started cooking.

I think I knew in the back of my head that this was the way to go because of how quick, simple and easy clafoutis are to make.

Oh, and if youโ€™re unfamiliarย with aย clafoutis, itโ€™s a french fruit dessert thatโ€™s a little more dense than say a dutch baby. Itโ€™s typically made with cherries (at least thatโ€™s what Julia Child used anyway). However, me being me, I switched things up and used blackberries and lavender. <โ€“ again I love this combo.

Hereโ€™s how this easy dessert works:

Blend everything but the berries and white chocolate in a blender. Transfer to a buttered baking dish and top with blackberries.

Bake.

Dust with a generous amount of powdered sugar.

EAT.

Four simple steps and so delicious.

The white chocolate is totally not needed, but it does add a special sweet and unsophisticated touch to this rather sophisticated dessert, which I kind of like, because if you meet me in real life, youโ€™d see that I am the least fancy person around. Jeans and a t-shirt girl over here, but then I guess I do sometimes get fancy with foodโ€ฆ

Anyway, point is, this dish is fancy meets not so fancy, and I think it works. Balance people, balance. This is great as an easy after dinner dessert, or served up for a Saturday or Sunday brunch, either way itโ€™s pretty delicious.

And one note about the lavender, if you donโ€™t want a super strong flavor use about 2-3 teaspoons dried lavender, if youโ€™re a lavender lover, go for about 1 1/2 tablespoons. I found that 1 tablespoon was perfect. And of course, if youโ€™re completely opposed to lavender you can simply omit it, but I urge you to give it a try, itโ€™s the perfect pairing with the blackberries. Trust me.

Lastly? If you wanted to just make this + a movie your Friday night, I would totally get that.

Sometimes summer nights should be all about hanging with friends, fireworks (have you guys been watching my instagram stories?), and staying up all night (ahhhhโ€ฆ..I actually donโ€™t think Iโ€™ve ever done that), but sometimes a good night-in is just what we all need!

My suggestion?

Makeโ€ฆ

โ€ฆthese Thai Coconut Musselsโ€ฆhonestly one of my favorite recipes of the summer.

โ€ฆsip on this cocktailโ€ฆor wine, but this is one of my gotoโ€™s (although I have a new one coming tomorrow)

โ€ฆbake up this clafoutisโ€ฆeat warm, maybe even with ice cream. I mean, I wouldโ€ฆjust sayinโ€™,

And that right there is my perfect Friday nightโ€ฆthen again I am semi-lame and act like a 60 year-old trapped in a 23 year-oldโ€™s body. But whatever, Iโ€™m OK with it.

OK and DONE. Happy Friday!

These were SO GOOD! I made them with raspberries because they’re in season here at the moment and it did not disappoint. The best way I can describe it is a perfectly sweet thick berry pancake. I’m going to make it again and serve it up for brunch! Thanks for an amazing recipe, Tieghan.

    Hi!
I just made a clafoutis based on this recipe, totally meant to put berries in but I had a few feijoas and SO many pears (theyโ€™re in season in Australia at the moment) so I sliced them and popped them in insteadโ€ฆ

As someone else mentioned, I too ended up baking this for 45mins and I think it actually couldโ€™ve gone a tad longer and been fine. I left out the white chocolate chips but the clafoutis isnโ€™t too sweet so I can definitely see how theyโ€™d add just the right amount of sweetness. Iโ€™m going to try again and add them. Thanks for a great recipe!

    1. halfbakedharvest says:

Thank you Amy! I am glad you liked these!
