  • Persian inspired Herb and Beef Stew with Rice. Because it's very much stew weather and I love a cozy weekend dinner. This stew isn't your average stew. It's different and it's VERY GOOD. It's lemony, spiced with turmeric, heavy on the herbs, served over rice, and it's even made in all ONE POT. Very into it. Shared the recipe on HBH this week - link in profile.   • Lemon Poppyseed Cake with Citrus Honey Glaze. Know it's January, but I'm still baking cake because when it's single digits and a 3 day weekend, what else do you do?! Enter this extra wintery, made on the healthier side cake. It's light and lemony, swirled with nutty poppy seeds + finished with a sweet citrus honey glaze. Every last crumb is SO GOOD. And?   • 30 Minute Coq au Vin Chicken Meatballs. Friday night snow storm, so comfort food all the way. The sauce is basically an entire bottle of red wine, with h mushrooms and herbs.   • Spicy Peanut Soup with Sesame crusted Halloumi. I am well aware that some might find this soup very odd, but trust me on this one. It’s peanutty, a touch spicy, extra creamy, has a good amount veggies (hello to sweet potatoes + kale), and yeah, I topped it with pan-fried sesame crusted halloumi cheese too...which is KEY. It's the best salty, crispy topping. Like I said, it's different. Just try it. Promise it is GOOD.
