It doesn’t look like it, but when you read this recipe, to me, it screams retro. Retro, like a recipe your grandma would have made way back in the day. This is totally something my Nonnie would have made on repeat. 

It’s EASY, which we of course love. My Nonnie was a real pro at creating delicious dinners that took very little effort on her part. She knew her time was better spent shopping with me! 

Her secret was using ingredients that did double the work. She would incorporate a lot of store-bought seasoning packets and sauces to add flavor. She’d also take shortcuts whenever she could. But regardless, her dinners were always delicious, and I know she’d fully approve of this recipe.

So what is the “retro” secret ingredient here? A little bit of ketchup. It gives this sticky sauce added body, flavor, and sweetness.

I know it’s not a new concept by any means, but I don’t often use ketchup for cooking. I usually reserve it for dipping my french fries. But I’m now sold on using ketchup in sauces. Sounds odd, but wow, it’s so delicious.

The details

This recipe is so simple and straightforward. Grab some broccoli and chicken, I love to use a mix of chicken breasts and thighs. My family prefers chicken breasts, but I think thighs always add flavor. They give just the right amount of fat to keep chicken from drying out. I find a mix is always nice! 

Arrange the chicken and broccoli inside a baking dish. I use a smaller sheet pan with sides. Ideally, you want to use something a little smaller than a 9×13 inch baker. This will allow the sauce to better thicken around the chicken. A sheet pan with sides is perfect!

Now the sauce. Mix equal amounts of honey, ketchup, and tamari (or soy sauce) together. Then add tart pomegranate juice, garlic, ginger, and chili flakes. Mix and pour the sauce over the chicken. 

Bake until the sauce thickens slightly around the pieces of chicken and broccoli.

At the end of cooking, I like to switch the oven to the broil setting and get the chicken caramelized on top. Just watch closely, the broiler can really work FAST. 

I was shocked at how well the timing of everything ended up working out. Nothing fancy here, just simple cooking, but very delicious.

Serve the sauce, chicken, and broccoli over steamed rice with plenty of green onions, and if you’re into it, pomegranates too. I love using them because they add color and juiciness.

  • 1. Preheat the oven to 450° F. Rub a baking sheet with oil.
    2. Arrange the chicken and broccoli in the prepared baking dish.
    3. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Bake for 25-30 minutes, until the chicken is cooked through and the sauce is bubbling.
    5. Turn the oven to broil and broil 3-5 minutes, until the chicken caramelizes on top. WATCH CLOSELY, the broiler works fast. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

Instant Pot

  • 1. Arrange the chicken and broccoli inside the instant pot bowl.
    2. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Seal the lid and cook on high pressure for 8-10 minutes.
    3. Once done cooking, release the steam. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

    My daughter found this recipe. I read all the comments. I bought organic, chicken thighs. We followed the recipe with the exception of adding one extra garlic clove, and I added a tablespoon of cornstarch to the sauce.

    It was delicious! Wish I could post a picture because it looked exactly like the recipe shows. We will definitely make it again. The pomegranate seeds are a must. Don’t skip that.

    Made this tonight, followed the recipe exactly, and it turned out delicious. Not watery as other comments have mentioned. I did use Bell & Evan’s organic chicken thighs so perhaps that was the difference??? I covered a sheet pan with foil put parchment paper on top for easy cleanup. Definitely a keeper.

    Sadly, the reviews are true. Came out very watery. Saved some of the sauce and used corn starch to thicken it on stove top and drizzled it on top. Great flavor but needs a solution for making it more crisp and less watery.

    Sadly I too found this watery, but I saved about a quarter of the sauce to pour on top and that made it thicker and stickier. I used a baking dish and it held all the sauce nicely, I don’t think I would want to use a pan. If I made again I would cook the chicken on the stove in a pan first to get rid of the juices, then add the sauce to keep it thick and sticky and roast the broccoli separately in the oven.

    Unfortunately, the instant potcooking time for the chicken and broccoli are not the same, and I ended up with grossly over cooked broccoli (I used the instant pot version). The sauce was okay, not great. Excited to try other recipes on this site, but won’t be doing this one again.

    This is so delish and was a big hit with my family. I did cut back on the honey and pomegranate juice a little to make it a little less sweet for my personal preference. the sauce was fine- just the right amount of sticky and not watery at all.

    Question- I made it this time on a sheet pan but would like to try the Instant Pot method sometime and want to double-check the cooking time because I’m worried about the broccoli falling apart after 18-20 min. would that be the correct cooking time?

      I made this in the instant pot and it was extremely overcooked. Both the broccoli and the chicken had no texture and were strangely mushy. The sauce was watery too, which I expected based on other reviews, but I didn’t spending any more effort to save this meal.

            Three stars for taste but I followed this recipe to a tee and ended up with a watery dish. If had broiled longer it would have burned and I prefer not to use cornstarch. But it was nice flavor.

    The flavor was tasty, but like a lot of others, my sauce stayed runny. I suspect it might be due to all the water that is injected into cheap meat to bulk it up (called “plumping”). Sometimes chicken gives off a lot of water when cooking, and sometimes it doesn’t, and I think it has to do with the quality of chicken you start with. I used the cheap stuff from Safeway tonight. Next time I’ll try Costco chicken breasts, which I don’t think are injected.

    In the end I just served it over rice anyway, so the runny sauce was useful.

    2. Good point. Sadly even Costco chicken is injected. I think you would have to try organic? Or get it from a farmer? For this recipe I’m going to try put the chicken on a broiler pan and do an extra bit of sauce in a saucepan to coat at the end/broil. HBH sauces are always the star of the show imo!

    Yum! My sauce also turned out really watery but next time I’ll try broiling longer than 5 mins. The broccoli flavor was BANGIN. The chicken wasn’t as flavorful, just cause the sauce wouldn’t stay on it, lol, but mixed all together in a bowl with rice I just scooped extra sauce in with a spoon and ate it all together so it was great. The green onions really made it perfect in my opinion! My husband loved it and didn’t even add green onions to his (I know what a freak). Will definitely make again and even if the sauce is watery it’s still delicious!
