So how do you feel about fries for dinner?

Because that is what these fries should probably be tonight. Maybe with a fried egg on top? Sounds pretty delish to me, but then again it’s carbs, cheese and eggs. Staple foods around here.

And you know, it’s totally cool that we are going to eat fries for dinner because one, these are sweet potato fries (ah yeah – health food!!) and two, these are oven fries, meaning no frying was involved, meaning we get to eat them all by ourselves, right? Yes, definitely… with a fried egg because I obviously think that’d be extra delicious, but that may because I have been egg obsessed ever since our chickens started laying eggs. It’s literally been eggs on everything over here.

Also, did I mention that I will soon be neighbors with my favorite little chicks? Yuppers! The chicks live right across from the barn, and you guys?!?!

The barn is really shaping up. Final floors are going to be poured on Friday, cabinets are being made, paint colors are being chosen and I am headed down to Denver today to pick out counters, kitchen sink + faucet, stuff for the bathroom and bedroom – to which I have thought nothing about because the kitchen is everything to me. I live in my kitchen, not my bedroom. I am excited to say the least. It’s surely a dream come true for me and I couldn’t feel more grateful.

But geez, I am overwhelmed. Keeping up with barn stuff, work stuff and life in general is ridiculously hard. It’s mostly the barn stuff and all the decisions though. I will forever hate serious decisions.

However, I will forever love sweet potato fries. Like forever and ever and ever.

I feel like you either love sweet potatoes or you hate them. If you hate them, well I have to say you are kind of crazy, but people call me crazy ALL. THE. TIME. so what the heck do I know anyway. If you love sweet potatoes though, than you probably love sweet potatoes fries, and you’ll for sure love these. They are perfectly spiced for autumn and well, there is a heck of a lot of cheese to dip (or um, smother) them in. I went a little Indian with the flavors, but then kind of not, because I added some parmesan cheese and some butter and those together just take things right back down to American and all things fall. The harissa dip though, that is pretty Indian inspired. Oh but wait, then I added the brie.

Ah yeah, I did. It just sounded so good and it was staring me down. I couldn’t resist. So it’s a baked brie and feta dip with some spicy harissa stirred in.

HEAVEN.

I made the fries in the oven to keep things healthy, plus when it comes to fries, I really just cannot deal with actually frying them. I have gotten to the point where doughnuts are manageable, but fries just take too much effort and way too much clean up.

And really, I have always loved oven fries. They are what my dad used cook and they will always be the best if you ask me.

Normally I would feel kind of lame about just showing you guys these Tandoori Butter Sweet Potato Fries. I mean fries are not much of a meal, but this is part of my whole “let’s get some sides + appetizers on this site” game plan that I told you about on Tuesday. PLUS, these are pretty picture perfect for this time of year and then hello, clearly these should be served at Thanksgiving. What could be better than spiced sweet potato fries and creamy dip on Thanksgiving. SO GOOD.

Ugh. I am sorry I am talking about Thanksgiving. I’ll stop now and switch to Halloween because these would be equally perfect for a pre-candy-coma snack. Or maybe even as some real food after all that candy. Or geez, maybe just have some before candy and some after candy. It’s all about a good balance on Halloween.

Oh and the color? It could not be more perfect for pre Halloween candy snackage. Or better yet, some Thursday night football eats? Yes, yes, yes.

Skinny Tandoori Butter Sweet Potato Fries w/Creamy Baked Harissa Feta.

Ingredients

Creamy Baked Harissa Feta

  • 8 ounces crumbled feta cheese
  • 4 ounces cream cheese softened
  • 2 tablespoon greek yogurt
  • 1-2 tablespoons harissa [homemade | https://www.halfbakedharvest.com/homemade-harissa-spicy-red-pepper-sauce/] or store-bought (depending on you taste)
  • 4 ounces brie rined removed + sliced into 1/3 inch thick slices

Instructions

  • Preheat oven to 425 degrees F.
  • Place cut potatoes in a large bowl and drizzle with oil + melted butter. Add the parmesan cheese, garlic, brown sugar, cumin, smoked paprika, ginger, cinnamon, saffron (if using), cayenne, salt and pepper. Gently toss with your hands or two spatulas to evenly coat. Spread the fries among two baking sheets in one even layer. Bake for 15-20 minutes, then flip and bake for 15-20 minutes more at 400 degrees F. You want the sweet potatoes to be crispy, but not burnt. If you want perfectly crisp fries I recommend spreading the sweet potatoes on a greased wire rack on top of a baking sheet and baking them as directed above. But this way is a bit of a pain.
  • While the fries are baking, make the dip. Add the feta, cream cheese and greek yogurt to the bowl of a food processor. Puree for 2-3 minutes or until smooth and creamy. Add 1-2 tablespoons harissa (I used 2) and puree until evenly mixed. Spoon the cheese into a small oven safe dish. Place the brie overtop the dip.
  • Place the dish on a small baking sheet and bake at 400 degrees F. for 15- 20 minutes or until the cheese is hot throughout.
  • Remove the fries from the oven and sprinkle with chopped fresh cilantro and flakey sea salt. Serve the fries warm with a dollop of cheese for dipping.

    second, holy god these fries. my sweet potato oven fries never look that perfect. you are a magical kitchen fairy, i know it. i love the combination of flavors here and i really like that you paired sweet potato fries (which look awesome enough on their own) with a substantial dip to make a meal.

    and… i guess third: eggs on everything yes. have you ever had chips and eggs? i enjoy dipping crispy oven fries into the yolks of fried eggs. i think it’s way more fun that soft boiled eggs + soldiers!

      Wish I could have chickens where I live but they’re not allowed. Our yard is big enough but we have noise ordinances.
