Yes yes YES.

We’re not just making any margaritas though. Nope, we are making pineapple lime beer margaritas. So really, all of my favorites combined into one. Or ok well, the pineapple and the lime are two of my favorites, but my family…ok Lyndsie, has taught me that tequila should be well respected…as should a good Mexican beer. Since I do the mixing and mashing of recipes, I thought well, why not combine the two and make a beer margarita. I’ve seen it done before, but have never actually tried it out myself.

I loved the idea of making a pineapple margarita with an extra hit of lime and then topping it with a Mexican beer for extra added flavor…and a little fizz action too. It sounded like perfection, so I went for it. Plus, the flavor combo and tropicalness of the drink made me think of a blue waters, blue skies, palm trees and sandy beaches. And that just makes me super happy. <–I mean, obviously.

Clearly most of us won’ be able to enjoy this on a warm Mexican beach…or well maybe some of you will? Any of you guys reading from Mexico? If so, I am very jealous.

Mexico or no Mexico, this is probably one of my favorite cocktails I have made yet. Again, I love tropical fruits and I really could not think of a better recipe to share on a Friday…

Speaking of which, who is so overly ready for Friday?

After a week of lots of mixed things coming at me, I’m kind of ready for the emails to slow, and for things to just chill out. I don’t know if any of you noticed, but after last week’s (zero fun) tech site issues, this week presented a few new ones. One of those being the daily email that goes out to subscribers, which is currently is a day behind. Some readers are even saying they are no longer receiving the email at all! We are definitely working to get this taken care of. In fact, we are in the process of switching to a whole new mail subscription company. I’m really excited about some of the things we have planned for the blog in the coming months, the first of them being a brand new HBH Newsletter, where I plan to do a little recap of what’s been on the blog, new recipes/projects that are coming up and other fun things too. Is there anything you guys might love to see inside the newsletter? Please, let me know!

In the meantime, so sorry to you email subscribers out there who are wondering what’s up. Hoping to get everything all worked out soon! Aside from the site troubles and tech glitches, I spent the week working on some Valentine’s Day recipes for the coming days…excited to share soon!

So, I ‘m not only sharing this recipe because it’s Friday, but Sunday is the Super Bowl, and I feel like whether your team wins or loses, we all need cocktails. Beer margaritas seemed like the perfect drink. I mean, for one, who doesn’t love a margarita. It’s a drink that both guys and girls can love equally and the beer factor makes it feel very football appropriate, or at least that’s my thinking.

When I make margaritas I like to keep them pretty straight forward. I don’t typically add any kind of orange liquor. One, I’m not big on sugary liquors, and two, I’m kind of under the belief that margaritas should be pretty simple. Good tequila and a lotta lime. I usually add some kind of fruit juice and top with a little sparkling water, cause I love fruit and carbonation like no other. Today my fruit of choice is pineapple and my fizz comes from beer. I’m not sure if this all sounds kind of weird, but honestly this is one of the best drinks. It’s light, not overly sweet (meaning if you drink responsibly-ish you probably will not have a sugar induced booze headache in the morning…cool, cool), and super refreshing. Not to mention really fun and easy to make!

Perfect for this weekend, spring break, Cinco de Mayo, summer…and just about every other day in between. <–truth.

Pineapple Lime Beer Margaritas.

Prep Time 5 minutes
Total Time 5 minutes
Servings: 1 drink
Calories Per Serving: 520 kcal

Ingredients

  • salt for the rim
  • 1 1/2 ounces silver tequila
  • 2 1/2 ounces pineapple juice
  • 2 ounces fresh lime juice plus wedges for serving
  • 1 tablespoon agave nectar or more to taste
  • 4 ounces Mexican beer such as Pacifico or Negra Modelo
  • pineapple wedges for serving (optional)

Instructions

  • Salt the rim of your glass. Combine the tequila, pineapple juice, lime juice and agave nectar in a cocktail shaker and fill with ice. Shake until combined and then strain into your prepared glass. Top off with beer. Serve with fresh lime wedges and pineapple.

Big Batch Margaritas.

Total Time 10 minutes
Servings: 6 servings
Calories Per Serving: 150 kcal

Ingredients

  • 3/4 cup silver tequila 6 ounces
  • 1 1/4 cups pineapple juice 10 ounces
  • 1/2 cup fresh lime juice plus wedges for serving, 4 ounces
  • 1/4 cup agave nectar may also use honey
  • 2 ounce Mexican beers such as Pacifico or Negra Modelo, 12
  • pineapple wedges for serving (optional)

Instructions

  • Combine the tequila, pineapple juice, lime juice and agave nectar in a large pitcher. Keep chilled in the fridge.
  • When ready to serve, salt the rims of 4-6 glasses. Add ice to each glass and pour the margaritas over the ice. Top with beer. Serve with fresh lime wedges and pineapple.

    P.S. In a pinch, I’ve substituted the pineapple juice for orange juice and added a splash of elderflower cordial – equally delicious!

  2. Ahhh. . .those amazing blue waters in Mexico. I could really go for that right about now. And I could definitely could go for a couple of these margaritas too. I’m not a beer drinker. . .but it sounds like the beer in this cocktail compliment the fruitiness of margarita. . .so bring it on!

      I think the beer does, but of course your could leave it out too!

  3. A silent visitor to your site, recently was not able to visit. It always throws an error as “too many redirect”. Open further investigation I found that hbd previously asked all browser that came to ‘http://’ to redirect to ‘https://’ and more importantly signaled the browser to remember this. But recently looks like u removed https (secure http). But for those who visited your site before, the browser still remembers to go to ‘https’ and result in this error. Just want to let u know….
