Iโ€™m always looking for new ways to recreate our favorite dishes. Making meatballs allows you to really enhance the flavor of chicken.

If you love a saucy meatball, this recipe is for you! I took inspiration from the popular โ€œmarry meโ€ chicken and created meatballs with a similar flavor and sauce. They turned out so delicious. Theyโ€™re drenched in a creamy sun-dried tomato sauce with plenty of parmesan cheese and yummy Italian seasonings.

Here are the details

Step 1: make the meatballs

I love to use ground chicken or pork for this recipe, but Iโ€™m sure that beef would be great too.

Now the seasonings: basil pesto and Italian seasoning. Then mix in some parmesan cheese as well.

Mix everything together and roll it into meatballs.

Step 2: cook the prosciutto + meatballs

Next, crisp the prosciutto in a large skillet. When the prosciutto is crispy, add the meatballs and start cooking them.

Once the meatballs are seared all over, this is when you can add the wine and the cream.

Step 3: finish and serve

Let the meatballs simmer in the sauce over medium heat, then finish with Parmesan and those yummy sun-dried tomatoes.

Serve these meatballs topped with freshly grated parmesan cheese and basil.

This dish is fresh, vibrant, and full of Italian flavors, yet still cozy. Itโ€™sMarry Me Chicken Meatballs | halfbakedharvest.com perfect for these early spring days when weโ€™re craving a pop of fresh color!

My only recommendation is to serve this dish with some kind of crusty bread. It could be garlic, homemade, or something from the store. Either way, add some bread. Itโ€™s ideal for scooping up the meatballs and all the sauce in this dish.

Yummy!

Love this dish! I cook half of the meatballs and freeze the rest for another day. Tonight I didnโ€™t have prosciutto so I used bacon and sautรฉed mushrooms with the shallot and garlic. Thank you for introducing this amazing dish to us!

Hello!!! My mom is wanting to make this for her birthday, but is worried because of the lack of breadcrumbs or eggs, the meatballs will end up falling apart. What do you suggest for this? Thanks!

    1. Tieghan Gerard says:

      Hey Mick,
I’ve never had any issues with that, but you could totally add either one of those if that is your preference.

I hope you love this recipe and Happy Birthday to your mom!!

What can I add as a side dish? Veggies? Pasta? Salad? Any suggestions? Beyond crusty bread.

  7. Julie says:

How is it best to freeze this dish so i can have it for multiple meals, put it all together and freeze in containers?
About to prepare it, comes highly recommended.

    1. Tieghan Gerard says:

Hi Julie! Yes! You can definitely freeze these meatballs to enjoy for multiple meals. The best way is to cook the meatballs first, let them cool, then freeze in a single layer before transferring to containers or freezer bags so they donโ€™t stick together. You can also freeze them with the sauce, but just know the creamy sauce may lose a little of its texture when reheated, so freezing the meatballs on their own usually works best! Hope you love them! ๐Ÿ™‚ xT

I just finished this recipe, and OMG it was delicious! I recently found one of Tieghan’s recipe books, and I have been spending the past month picking two recipes per week. I haven’t found one I’ve disliked so far!

As for this recipe, I accidentally forgot to include the pesto in the chicken meatballs (oops), but after noticing, I added it to the pan with the tomato paste. It still tasted very good. Definitely will make again. Maybe with the pesto in the meatballs this time haha.

    1. Tieghan Gerard says:

Hi Liesl! Aw thank you so so much for trying out the recipe! I am so glad you recently discovered HBH, we’re so happy to have you here in the HBH community! Thanks again for the kind comment! xT

  9. katie says:

can you substitute chicken broth for the white wine?

    1. Tieghan Gerard says:

Hey Katie! Yes, you can definitely use chicken broth instead of white wine in this recipe! Hope you love these meatballs! xT

I had ground chicken from a grocery trip and heavy cream to use so decided to give this recipe a try. It’s DELICIOUS! My husband told me ‘this is awesome’ as soon as I walked out of the kitchen. The sun-dried tomatoes, tomato paste and cream combine for a burst of flavor I did not expect. The meatballs aren’t overly heavy or greasy since they’re made with chicken. I served it with penne and will try other options in the future because I’ll definitely be making this several times.

    1. Tieghan Gerard says:

      Hey Malea,
Happy Thursday! I appreciate you giving this recipe a try and sharing your comment, love to hear that it was a winner!!
