The last week has been total island living for me.

And clearly I have been lovin it. Maybe a little too much, but it’s not a super long vacation and I decided from the start that I was going to take full advantage of my time here in sunny Florida.

Plus, up until Saturday I had my brother here helping me relax and not think about all the things I really should be doing. My inbox is full and comments are building up….SO SORRY if you have had a question and I have not yet responded (I am slowly working my way through everything, but just keep emailing if you don’t get a response). Just blame my brother and his constant need of a margarita in his hand. The kid knows how to have a good time and his careless, “life is good” attitude is pretty contagious.

I have to say, I am going to majorly miss him when he goes off to school next year. Enter giant sad face.

Anyway, Kai showed me a good time this last week and I fed him good food. Seemed like a good trade-off.

I tried SO hard to get him to try some tropical fruits and even made this Island Mango Goji Berry Sunrise Smoothie on the hottest day, BUT, while the kid is fun, he’s still crazy stubborn about not eating fruit.

Meaning he won’t even try them (who doesn’t like fruit!). Although, I am pretty sure if I would have spiked these smoothies with a little tequila he would have been all for them… next time.

Anyway, no matter where you are or what you are doing, these smoothies are AWESOME.

They are full of healthy antioxidants, vibrant colors and even a secret little veggie too.

I added a beet to get my colors just a little more vibrant. Worked liked a charm and you’d never guess there was a beet in here, but I think it’s kind of cool that there is.

The mango/goji berry combo is one that I had personally never tried before, but am pretty excited to use again. Normally I am not super crazy about goji berries, just because I actually do not find their flavor all that amazing, but when mixed with other fruits, those pretty, healthy packed berries are darn good and pack in some awesome flavor.

Bonus, these smoothies are super easy to make. Like five minutes and you’re done. YES.

Oh, and if you happen to be on vacation, I wouldn’t judge if you wanted to add just a little tequila….

Island Mango Goji Berry Sunrise Smoothie.

Ingredients

  • 1 cups fresh or frozen mango peeled + roughly chopped, about 1 1/2
  • 3/4 cup fresh orange juice + 1-2 teaspoons orange zest
  • 2 tablespoons chia seeds optional
  • 1 ripe banana frozen if possible
  • 3/4 cup almond or coconut milk more if needed
  • 1/3 cup fresh or frozen raspberries
  • 1/3 cup fresh or frozen strawberries
  • half a small raw beet cut into chunks (optional)
  • 2 tablespoons goji berries
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon vanilla extract

Instructions

  • In a blender, combine the mango chunks, 1/2 cup orange juice and the orange zest. Add half of the banana. Blend until smooth, adding more orange juice if needed. Once smooth, add the chia seeds and blend until just mixed. Careful you don't want to grind the chia seeds into the drink. Pour the mango smoothie into a glass measuring cup.
  • In the same blender (no need to clean it), add the remaining banana half, raspberries, strawberries, beets (if using) goji berries, ginger and vanilla. Add the almond or coconut milk and blend until smooth, adding more milk if needed.
  • Pour the red smoothie into two glasses. Pour the mango smoothie over top of the the raspberry-goji smoothie and use a long spoon to mix them together - just a little. Drink up!

  5. Agreed on the goji berries- I don’t really like them on their own, but they add a nice sweetness when combined with everything else. And the color on these is gorgeous!

  6. Hah? You said there is beets in the mix, but they do not show up in the instructions. I was actually pretty excited about beets, I am all about hiding veggies in my smoothies. Have never tried goji berry, have not even seen it in special stores… But love that smoothie!! Will try!!

  10. This is such an awesome smoothie, Tieghan! I love the addition of the beet, that’s one of my favorite tricks to use when I run out of berries and need some color. I can tell you’re having a good time in Florida (and may or may not be SUPER jealous!)
