I’m declaring this the summer of simple salads here on HBH. Over the last six (almost 7) years of writing and creating new recipes for you all, I’ve steered clear of recipes like today’s salad. Why? For stupid reasons that I made up in my mind. Because if I’m being totally honest, I’m slightly insane, and I worry too much.

I feared that the easy recipes were not “good” enough to share. Even though they were recipes that my family and I really enjoyed…and ate often.

But as I’ve gotten older, I’ve learned more and more about what you guys are looking for. I’ve realized that recipes like this watermelon salad, and last year’s corn pasta, are the simple recipes that most of you are seeking out. They highlight the fresh ingredients of summer. They’re simple to throw together, healthy, and most importantly, they’re DELICIOUS.

Long story short, I made us a watermelon salad. It’s super simple, but also super addicting…which is not a bad thing considering just how healthy this salad is.

The bulk of the salad highlights two of summer’s produce stars, watermelon and tomatoes. Yes, I know it is early into June. But every single year August rolls around and I feel like I’m late to the game with the seasonal recipes. And like I mentioned yesterday, I’m just really excited about summer produce right now and full-on embracing it.

Here’s how you make this salad, are you ready? It’s the easiest, simplest, and you’ll love it.

First, get yourself your first watermelon of the season and cut it into cubes. Add cherry tomatoes, cucumbers, buttery olives, and so much feta cheese. That’s the salad…pretty easy, right?

Now, let’s talk about the basil vinaigrette. It’s a mix of high-quality extra virgin oil, balsamic vinegar, lemon, plenty of basil, fresh chives, and black pepper. It’s actually my go-to vinaigrette for weekday salads. I’ve loved balsamic and basil since I was a kid, so it’s just what I tend to use most often. That said, it pairs perfectly with watermelon and feta, balancing the sweet and salty flavors.

So, this salad is NO COOK, oh so PRETTY, and oh so GOOD. And it only takes minutes to toss together.

  • 1. In a salad bowl, arrange the watermelon, tomatoes, cucumbers, olives, and feta cheese.
    2. To make the basil vinaigrette. In a glass jar, whisk the olive oil, balsamic vinegar, lemon juice, and honey. Add the basil and chives. Season with salt and pepper.
    3. Drizzle the vinaigrette over the the salad. Sprinkle with salt and pepper. Enjoy!

    I loved this recipe it’s simply amazing!! The flavors are all wonderful and balance each other out perfectly!! It would have been nice to get a watermelon that was sweeter. Where do you get most of your produce farmers markets?? I am going to start cooking for a family next week and I’ll be using a lot of your recipes.
