You all! I looked at the calendar a few days ago and was shocked that weโ€™re basically a week away from Memorial Day. How did that happen? This month flew by. It felt long, but at the same time, I just blinked, and now itโ€™s almost summer!

Wow, Iโ€™m excited! I really need those long days, warm nights, sunshine, and humidity โ€“ I love it all. Iโ€™m so excited for summer.

Thereโ€™s no better way to celebrate summer than with ice cream. Thereโ€™s just something special and magical about ice cream.

When I realized how close Memorial Day was, I immediately started plotting out ice cream recipes. The cookie dough blizzard from DQ was always a childhood favorite, and my sister-in-law, Lyndsie, is always, always, begging me to make anything with cookie dough pieces; itโ€™s her favorite.

With Lynds in mind, I thought, whatโ€™s something yummy with cookie dough flavor that I could share? These mini bites came to mind. How delicious? A layer of homemade cookie dough, then vanilla ice cream, and a chocolate shell.

These are the details we all need

Step 1: make the cookie dough

This is my favorite dough, itโ€™s egg-free, low-sugar, and yet so yummy. Youโ€™ll need almond flour (you could also use oat flour), cashew butter, honey, butter, vanilla, and mini chocolate chips.

Mix everything together all at once in the same bowl. Nothing fancy or special about the process.

I adore this cookie dough. The cashew butter is the secret. I swear, all by itself, it already tastes like cookie dough!

Step 2: assemble

Ok, now, line a square baking pan with parchment paper. Press the cookie dough into the bottom of the pan. Freeze it for a few minutes. Then, layer on a thick layer of vanilla ice cream base, then freeze again. Tillamook is one of my favorite ice cream brands.

You want to freeze the bars really well for the best texture, so freeze for at least 4 hours, but if you can, overnight is best.

Step 3: cut and dip

Next, cut the slab of ice cream into tiny bite-size squares. Cut anywhere from 32 to 48 squares. Working as quickly as you can, line the squares on a baking sheet, then freeze until they firm back up. I recommend an hour, but again, overnight would be great.

The colder the ice cream is, the easier the dipping process goes.

Oh! And if you want to, at this point, you can insert a popsicle stick into the ice cream. I will say that the sticks make the chocolate dipping process really easy, but theyโ€™re also not necessary.

Step 4: cover in chocolate

Once frozen, dip each square into melted chocolate and sprinkle with sea salt (if desired). Freeze to chill the chocolate, then keep these stashed away in the freezer.

You can enjoy these straight out of the freezer at any time. Theyโ€™re the perfect two-bite frozen treatโ€”creamy, sweet, salty, and literally perfect!

Ingredientsย

  • 1. To make the cookie dough. Mix all ingredients except the chocolate chips in a bowl or in a food processor. Mix in the chocolate chips.
    2. To make the bites. Line a 9ร—9-inch square pan with parchment paper.
    3. Press the cookie dough into the bottom of the prepared pan. Freeze for 10 minutes. Spread the ice cream over the cookie dough in an even layer. Cover and freeze for 4 hours or preferably overnight.
    4. Line a baking sheet with parchment paper. Remove the slab of ice cream from the freezer, cut into small squares (32-48 squares), and arrange them on the prepared baking sheet. Freeze until firm, at least 30 minutes.
    5. In a microwave-safe bowl, melt together the chocolate and coconut oil. Dip each bite in chocolate. Sprinkle with sea salt (if desired). Freeze until completely frozen, 2 hours. Eat and enjoy the sweet, creamy goodness.

    Iโ€™m just wondering if this could be made in a cheesecake pan and then drizzle the melted chocolate on the top layer and freeze. Then release it as sort of cookie dough ice cream cake? Also can you use regular cookie dough? I love your oatmeal chocolate chip cookies? Could those be subbed in? Thank you!

      Sure, you could make in a cheesecake pan or just even in a cake pan and not make them as bites.

      You cannot use regular cookie dough because it is not getting baked. It’s not safe to eat raw eggs or flour.

    I made this recipe and instead of dipping the ice cream bars in melted chocolate, I added a layer of chocolate ice cream to the top. The sticks did not work well, so we just ate them by hand. Yummy and a nice treat if you want an ice cream fix without the full calories of a dish of ice cream. I cut up the bars and froze them. We took them out when we in need of ice cream. That is daily. ๐Ÿ™‚

    I am an experienced cook and baker and I found these very difficult to make so that they were presentable. I got only about 4 good looking chocolate covered cookie dough ice cream bites. Next time I would melt the chocolate and coconut oil, but only pour enough for 1 or 2 bites to be dipped at a time. Otherwise the chocolate seizes from the cold (and then melting) ice cream and the end result is not pretty. I would also take the frozen bites out ONE AT A TIME to dip, so they stay as frozen as possible. I would keep pouring the melted chocolate in a small glass or bowl a little at a time, until all the squares have been dipped. I gave my 8 and 12 year old the 4 that looked great, and they were thrilled with them.

    Too many chocolate chips! makes it difficult for the dough to hold together. The density difference between the cookie dough and the ice cream make it very difficult to cut when frozen. And inserting popsicle sticks are almost impossible in the dough side (as pictured). I had trouble dipping them in chocolate, which may be my problem, but it is not as easy as the instructions make it sound. I don’t recommend this recipe without some adjustments. Note: I am not a total newbie to the kitchen nor am I a professional. I have been cooking / baking for my family for 50 years. And this was a huge challenge for me.

    The end result tasted great. Difficult to make it look presentable. I was only able to get about 24 servings. The 9×9 pan made it difficult to cut these into smaller portions without the entire “bar” breaking apart. I added the stick after spreading the ice cream (while it was still soft). The coconut oil was necessary to allow the chocolate to be thin enough to dip. I recommend sprinkling with sea salt.
