So you guys? Have you ever tried to come up with a name for a recipe before? My guess is that for most of you the answer is probably no…since you don’t spend 24/7 developing new recipes. Let me let you in on a little behind the scenes info, coming up with recipe titles can be hard. Honestly, I’ve been working on this recipe title for probably over an hour now. Yes, over an hour. I know that’s INSANE, and I do realize that most normal and sane people would have decided on a title within five-minutes. But…crazy, insane, always over-thinking everything…me? Nope, I needed an hour to figure this one out.

I just could not come up with a name that best described how delicious this simple breakfast bowl is. Normally, I really don’t have that hard of a time with naming my recipes (although they can be long), but on occasion, I have trouble. Today’s recipe however, was one for the books. I mean, it’s the simplest of recipes, but yet I just could not come up with a good name.

Oh well, in the end I’m going with this, The Best Everything Spice Egg Avocado Yogurt Bowl.

Yes, yes. Please just say you…well…please say that it at least works. Please.

In all seriousness, I love this yogurt bowl so freaking much. I’ve been on a mission to show you guys a savory breakfast bowl for weeks now. At first I started out with testing savory oatmeal recipes, and while I tested a couple of oatmeal bowls that I really enjoyed, nothing beat a bowl of oatmeal topped with sweet bananas.

So, when I wasn’t 100% in love with the oat bowls, I moved onto yogurt bowls, and that’s when everything started to really click.

This recipe is roughly inspired by a few things.

One, I have a recipe in the cookbook for whipped goat cheese with avocado, and eggs. I LOVE this recipe more than anything, but I wanted to have a simpler version for everyday breakfasts. Enter this bowl.

Two, my obsession with greek yogurt. If you didn’t know, I eat Greek yogurt every single day. It’s my favorite served with nuts and seeds, but I also love using it in place of sour cream for things like soup and nachos. It’s for sure a favorite ingredient. Enter this bowl.

Three, Bon Appétit Jammy Soft Boiled Eggs. Truth? I really just needed a new way to serve up these eggs other than with toast. Enter this bowl.

Four, everything bagels…because their the best. Enough said.

For a while, I wasn’t really sure how I wanted this bowl to come together. I mean, there are SO many ways you can put together a savory breakfast bowl, but in the end, I decided that I wanted to stick with the theme of Healthy January, keep things simple, and give you guys a recipe that can be thrown together in a matter of minutes, but was still delicious.

Here is how this goes.

First: spread some thick plain greek yogurt in the bottom of a bowl. I prefer full fat. It’s kind of just the best…you know it.

Second: add a little brown rice, preferably warm brown rice, but cold is ok too (psst, but warm is better).

Third: add an egg, I’m having a moment with soft-boiled eggs, but poached and fried are both equally delicious. Bonus points however go to the soft-boiled egg, as you can make a giant batch on Sunday and keep in the fridge for breakfast with almost no prep or mess.

Fourth: add an avocado, don’t be stingy.

Fifth: sprinkle everything spice over the entire bowl. Oh my gosh, this is the best…be generous.

Sixth: finish with some greens, a drizzle of olive oil, and fresh herbs…if you have them, if not, just add more everything spice, no worries.

DONE.

And now you see, right?

It’s the simplest bowl of food, but yet, it might just be one of the most delicious. I could eat this breakfast, lunch, or dinner, and be pretty happy about it.

What’s incredible about this healthy bowl is that it literally takes no time to throw together. On Sunday make a big pot of brown rice, soft boil some eggs, and grocery shop for the other ingredients. Then you’ll be all set to make delicious, healthy five-minute breakfasts.

Yes, yes, yesss. You’re welcome.

For those of you who don’t want to make homemade everything spice, I hear Trader Joe’s and Whole Foods both carry Everything Spice in their stores. I have also heard that Trader Joe’s everything spice is kind of life changing, so you know, if you just want to buy it, I get it.

Also? As I blatantly hinted above, I do like to have some of my ingredients warm. I just love warm food, but especially in the morning. Normally, I just warm my rice on the stove (I don’t have a microwave) and make fresh eggs in the morning. I realize not everyone has time for this, but if you like warm breakfast food, this is must do step.

Warm or cold though, this breakfast is not only healthy, it’s completely satisfying.

  • 1. Spread the yogurt between 2 bowls. Top with brown rice, eggs, and avocado. Drizzle with lemon juice. Sprinkle with everything spice. Add a handful of greens. Drizzle each bowl lightly with olive oil and sprinkle with fresh herbs. Enjoy!

    I love this avocado everything spice bowl! Haha and I agree the name is difficult. When I’m in town and make my mom dinner, she often says “what’s the name of this?” Haha and I end up just listing the ingredients.
    I do like this bowl with everything spice and feel like it would even be good with some lox or maybe goat cheese? 🙂

  3. Thank you for sharing a healthy savory breakfast bowl! I only do savory for breakfast. The recipe is also a good reason for me to use my Trader’s Joe everything but the bagel seasoning which I have not used even though I have it for quite a few weeks already.

    I like this. I’ll have to try it. What do you use in the everything bagel spice mix?
    I like the brown rice; Farro would work,too. Also, could skip and put the rest in a whole
    : wheat pita pocket…for quick on the go.

    We have been doing soft boiled egg and brown rice for breakfast for a few years now and love it….such a filling breakfast. We do cook all the rice and eggs and put them in the fridge ahead and, like you, I like mine warm….doesn’t have to be piping hot. So what I do is pour up an extra cup of hot water when I’m having tea and drop my already soft cooked egg into it. Warms it up just right! Can’t wait to try this with the addition of the greek yogurt and avacado, all by favorite breakfast foods in one! YEA! Thanks again Tieghan!

    Yes, yes, YES!! This is amazing! I was waiting for something like this for ages now and finally, Tieghan, I knew I can count on you. You’ve hit the empty space with this yogurt bowl.
    Although, I’m not a savoury breakfast person, not my thing. But I will eat this for lunch! Aaaand, since I hate any kind of rice, I’m thinking about swapping it for lentils. That sounds awesome, what do you think? But soft boiled jammy eggs with avocado and extra thick delicious yogurt.. Oh yum, a dream coming true. Plus the everything bagel spice makes it even better. It’s a pity our stores don’t offer something like it, but I will make my own, it shouldn’t be hard.
    However, there is a thing with me and a perfectly soft boiled egg.. For the one’s sake, I’m not able to make them according to my likings. They end up either over cooked (not so ooey gooey) or still too raw. I’m such an antitalent.. This is the reason I’m not making them often, but my love for them is indescribable.
    I just cannot wait for the weekend when I will finally have time to prepare my meal ready to serve immediately (because through the week, I live on prepped boxes and bentos).
    Thank you for this inspiration, I really adore the idea.
    And don’t worry about the recipe names, I struggle with this all the time. Sometimes it takes me half an hour to come up with somewhat suitable. Oh well, blogger problems, right?
