You all know how much I adore spooky season. I thrive this time of year and have so much fun creating festive Halloween recipes.

And you know whatโ€™s especially fun? These cookie bars remind me so much of the girl who started this website with her mom back in 2012 (I was a baby!). They feel like something I would have made in those early days of HBH, which makes me love them even more.

And today is my Nonnieโ€™s birthday! It feels like a sign that these cookies were meant to be shared today.

She would have loved how easy these are to make and, even more, how delicious they are. Nonnie and I shared a love for all things Halloween, and I know she would have had so much fun with these.

These bars actually happened on a whim. I had this little inkling that I wanted to make something really simple, delicious, and fun for Halloween. And before I knew it, Iโ€™d spent the entire day developing and decorating mummy cookies. A pretty great fall workday, if you ask me!

The cookie base is SO delicious. Salted butter and dark brown sugar are the secrets to making these cookies extra soft, buttery, and flavorful.

You know those Pillsbury Christmas sugar cookies? The ones with the little Christmas trees, reindeer, and Santas? These smell just like those when theyโ€™re baking. Itโ€™s the best!

But I promise, these taste even better!

  • light or dark brown sugar
  • all-purpose flour
  • an egg
  • coarse turbinado sugar
  • dark or semi-sweet chocolate chips
  • white chocolate chips
  • candy googly eyes

The Steps

This is a very simple brown sugar cookie dough. Beat the softened butter with the brown sugar and vanilla until combined. Add the egg, then mix in the flour and salt.

The brown sugar is what makes these a little different from classic sugar cookies. It gives them a wonderfully soft texture and a rich, delicious flavor.

Step 2: Chill the dough

Press the dough into a parchment-lined baking dish, then freeze until firm. Chilling the dough makes it much easier to cut into clean little rectangles.

Once chilled, cut the dough into rectangular bars. They donโ€™t need to be perfect. I actually think slightly different shapes make the mummies even cuter!

Roll each cookie in turbinado sugar, gently pressing the sugar onto the sides. Arrange the cookies on parchment-lined baking sheets, then freeze again before baking.

Step 3: Bake

Bake until the cookies are lightly golden. Theyโ€™ll spread a little, which is exactly what we want. The more imperfect, the cuter each cookie turns out. Itโ€™s Halloween, after all! Things are supposed to be a little spooky, so nothing needs to be perfectly uniform.

The best part is that each cookie bakes up soft in the center with just a little crispness around the edges.

Step 4: Melt the chocolate

Now for the fun part! Melt the dark chocolate and white chocolate separately.

I donโ€™t have a microwave, so I melt my chocolate over very low heat on the stove. But you can absolutely use the microwave, which is usually the easiest option.

If youโ€™re using the microwave, heat the chocolate in short intervals, stirring between each. Once most of the chocolate has melted, keep stirring until completely smooth. The residual heat will melt those last few pieces without overheating the chocolate.

Chocolate can easily seize or burn, especially white chocolate, so take your time. And make sure your bowls and utensils are completely dry. Even a little water can cause melted chocolate to seize.

Step 5: Make the mummies

Dip each cooled cookie into either dark or white chocolate. I like using a fork for this because it makes dipping so much easier! Place the cookie on the fork, dip it into the chocolate, then gently tap the fork against the side of the bowl to remove any excess.

Transfer the cookies to a parchment-lined baking sheet and add the candy googly eyes while the chocolate is still wet.

You can also use Oreos to make larger eyes! Twist the Oreos apart, break them into smaller pieces, then use a little frosting to secure the candy eyes on top.

Freeze the dipped cookies for a few minutes to set the chocolate.

Finally, drizzle additional white chocolate back and forth over each cookie to create the mummy wraps. Donโ€™t worry about making them too neat. Those messy little drizzles are what make them look like mummies!

For serving and gifting

These are such fun cookies for a Halloween party, especially because you can make them ahead of time. Arrange them on a big platter, tuck them into treat bags, or bring them to school for a festive Halloween treat.

Theyโ€™re also adorable packaged in little tins. I love the idea of filling a tin with mummy cookies and bringing it along as a hostess gift throughout October. You can also wrap them individually or package a few together in small bags for an easy grab-and-go treat.

And because they travel well once the chocolate has set, theyโ€™re perfect for parties, school events, or wherever your Halloween plans take you!

  • 1. Preheat the oven to 350ยฐF. Line a 9ร—13-inch baking dish with parchment paper.
    2. Using an electric mixer, beat together the butter, brown sugar, and vanilla until combined. Add the egg, then the flour and salt. Beat until just combined.
    3. Press the dough evenly into the prepared baking dish. Freeze for 30 minutes.
    4. Cut the dough into 22โ€“24 rectangular bars. Place the turbinado sugar in a shallow bowl and roll each bar in the sugar, gently pressing to help it adhere. Arrange on parchment-lined baking sheets. Freeze for 30 minutes to 1 hour.
    5. Bake for 12โ€“15 minutes, until lightly golden around the edges. Let cool completely.
    6. Melt the dark and white chocolate separately in the microwave, stirring until smooth. Let cool for 10 minutes.
    7. Dip each cookie in dark or white chocolate, then place on a parchment-lined baking sheet. Add candy eyes while the chocolate is still wet. For larger eyes, use pieces of Oreo cookies and a little frosting to secure the candy eyes. Freeze for 5 minutes, then drizzle with white chocolate to create the mummy wraps. Chill until set. Store in the fridge.
