1. Preheat the oven to 350°F. Line a 9×13-inch baking dish with parchment paper.2. Using an electric mixer, beat together the butter, brown sugar, and vanilla until combined. Add the egg, then the flour and salt. Beat until just combined.3. Press the dough evenly into the prepared baking dish. Freeze for 30 minutes.4. Cut the dough into 22–24 rectangular bars. Place the turbinado sugar in a shallow bowl and roll each bar in the sugar, gently pressing to help it adhere. Arrange on parchment-lined baking sheets. Freeze for 30 minutes to 1 hour.5. Bake for 12–15 minutes, until lightly golden around the edges. Let cool completely.6. Melt the dark and white chocolate separately in the microwave, stirring until smooth. Let cool for 10 minutes.7. Dip each cookie in dark or white chocolate, then place on a parchment-lined baking sheet. Add candy eyes while the chocolate is still wet. For larger eyes, use pieces of Oreo cookies and a little frosting to secure the candy eyes. Freeze for 5 minutes, then drizzle with white chocolate to create the mummy wraps. Chill until set. Store in the fridge.
