Today Iโm excited to share 36 of everyoneโs favorite crockpot dinners. These are the recipes I make on repeat once the weather turns chilly and we start getting closer to the holidays. Everything from easy chicken and rice to slow-cooked pot roast, pastas, soups, and my very best chili recipes. Nothing quite beats crockpot chili on a cold fall night. Thereโs even a recipe for crockpot mashed potatoes, which are so good for Thanksgiving. Because somehow, Thanksgiving really is just around the corner!

The leaves have turned the prettiest shades. Our nights are cold, but the days are still filled with the warmth of the autumn sun. I love the way the light hits this time of year. It has the most magical glow.
With the big weather shift this week, both my mom and I agreed it was time to share our favorite slow-cooked dinners.
Growing up in the Midwest (though apparently calling Ohio the Midwest can be controversial!), damp, chilly fall days meant pulling out the crockpot. My Nonnie was a pro with crockpot chili, my mom would make pot roast on Sundays, and there were always soups throughout the fall and winter.
And now, I love my crockpot too. Itโs the best for chili and soup, but especially for those less expensive cuts of meat that really benefit from a long, slow cook. Our favorites are pot roast, short ribs, and shredded beef for tacos. But the crockpot can also be incredible for mashed potatoes, pastas, and even keeping things like Thanksgiving gravy warm throughout the night!
I have a handful of new crockpot recipes coming this season, but there are also so many favorites from previous years that I wanted to bring back and highlight for you all.
Iโd love to know which recipes youโre most excited to try. Are you a soup-and-chili person like me, or do you love a classic pot roast or short ribs? And is there a new crockpot recipe youโd like to see? Iโm already in Thanksgiving planning mode and looking for ideas as we head into the holiday season!
Hopefully, youโll find a few new favorites to add to your fall and winter rotation.
Enjoy, and again, happy fall!

Slow cooked short ribs in red wine with fresh herbs and sweet cranberries. Theyโre a one pot and done kind of dinner, festive, and totally delicious. Serve these over a bed of creamy mashed potatoes and youโll have the perfect dinner for a cold night in.
