These soft muffins are made with overripe bananas, coconut oil, pure maple syrup, eggs, vanilla, flour, butter, and warm winter spices. Theyโ€™re tender, lightly sweet, and finished with salty maple butterโ€”truly everything you want in a banana muffin.

Like clockwork, once January rolls around, all I want to bake is banana bread or banana muffins. Thereโ€™s just something about winter days that makes me crave banana breadโ€”it feels like the perfect sweet treat after a holiday season full of cookies and sugar.

I love my banana bread recipe more than anything, and over the years, Iโ€™ve made so many variations. But somehow, I realized I didnโ€™t actually have a classic banana nut muffin recipe. That clearly needed fixing.

I talked it over with my cousins Maggie and Abby, and it was unanimous: banana muffins. Must make them. They also reminded me that I still owe them another recipe Iโ€™ve been teasing for a weekโ€”so thatโ€™s coming very soon.

For now, this is the perfect January banana muffin. Easy to mix, easy to bake, and ideal anytime youโ€™ve got overripe bananas sitting on the counter. Cozy, classic, and absolutely deliciousโ€”everything a banana muffin should be.

The Steps

Step 1: Prep the Recipe

Line a muffin tin with paper liners and preheat the oven. Get all of your ingredients measured and ready to goโ€”this recipe comes together quickly once you start.

Step 2: Make the Batter

In a large bowl, mash the bananas until smooth. Stir in the coconut oil, maple syrup, eggs, and vanilla until fully combined. This is where everything starts to smell really good.

Add the flour, cinnamon, baking soda, and salt. Gently mix just until combined to keep the muffins soft and tender.

Stir in the chocolate or the walnuts. I usually use one or the other, but you can absolutely do a mix of both if thatโ€™s your preference.

Step 3: Bake

Spoon the batter evenly into the prepared muffin cups, filling them almost all the way to the top.

Bake until the muffins are golden and your kitchen smells like banana bread.

Step 4: Make the Salty Maple Butter

Beat all of the butter ingredients together until light, fluffy, and whipped. It should be perfectly salty-sweet and completely irresistible.

Serving

Let the muffins cool for just a few minutes, then enjoy them warm with plenty of salty maple butter slathered on top.

Thatโ€™s it. Each muffin is soft, moist, and filled with either melty chocolate or nutty walnutsโ€”or both. I usually bake one batch with nuts and one with chocolate, and they always disappear fast once the butter comes out.

If you warm them up before serving, theyโ€™re extra cozy and completely irresistible.

Delicious muffins! Super moist and domed nicely (baked mine at sea level), so my guess is anyone with flat muffins may have just over mixed their batter. Iโ€™ve baked at both sea level and CO elevation for years and there donโ€™t always need to be major adjustments made, often just slight changes to bake time. For those asking about changes at sea level, I can confirm that this recipe was spot on and needed no adjustments. I havenโ€™t tried the maple butter yet because they were so good without, but will try next time! Nice and sweet from the bananas and maple syrup, without being cloying. I normally add chocolate to mine but was looking for an option with nuts and used pecans, which turned out delicious. Will definitely be making again, thanks!

This is a such a solid and delicious muffin recipe that will be on repeat with my family!

I did use 3 bananas vs the 4 the recipe called for since that was just what I had. I also added 2 TBSP of flax and used chocolate chips, no nuts but will add next time I make!

    So yummy!

I made a triple batch tonight, enough for 2 dozen muffins plus a banana chocolate chip loaf. They turned out perfectly and the kids declared they were the best muffins ever! We even had just enough at the end to try making a pancake, which was also great. I omitted the topping for simplicity sake but otherwise, this recipe has definitely proved itself plenty versatile and easy.

My only note is that I used the number of bananas suggested for a double batch initially but I wound up with WELL over the amount needed once mashed, and these weren’t big bananas. Maybe this is where some others might have struggled if they didn’t double check??

    1. Tieghan Gerard says:

      Hey Angela,

Made these as a snack for my kiddos but left out the chocolate and nuts, they loved them. I also added a tablespoon of flax seed

This is without a doubt the best muffin recipe; I cannot believe this has such few stars and so many complaints; not sure where everyone went wrong, but know that this is incredible. I followed the recipe to a T, and my bananas were extra ripe. I omitted walnuts because I did not have them and used only mini chocolate chips. This made exactly 12 muffins with nice, soft muffin tops. Literal perfection. My kids devoured them as soon as they came out of the oven.

      Hey Nicole,
Happy Monday! Big thanks for making this recipe and sharing back. So glad it hit the spot!
