  • Creamy Butternut Squash Alla Vodka Pasta. Because Monday night is always better with a cozy pasta. I mean, right? This is just like classic alla vodka, but minus the tomato and plus roasted butternut squash. It's creamy, warming, and finished off with salty, crispy prosciutto bread crumbs. So. Good.   • Instant Pot Broccoli Cheddar and Zucchini Soup. It’s cozy, but healthier than the average broccoli cheddar soup, easy, and so delicious. Hands down this one of my favorites and it's so incredibly easy to make with an instant pot OR slow cooker. Trust me, this will become a new fall go-to. Recipe below. Get at it. Perfect Sunday night...but really any chilly night works. PS. it's better than Panera's. It's true. Slow cooker and stove top directions are on HBH (linked in profile). ..
2 tablespoons extra virgin olive oil
3 tablespoons butter
1 small yellow onion, chopped
1 carrot, chopped
2 medium zucchini, chopped
2 tablespoons fresh thyme leaves
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon cayenne, or more to taste
kosher salt and pepper
3 cups low sodium veggie or chicken broth
4 cups broccoli florets
2 bay leaves
1 cup whole milk or coconut milk
2-3 cups shredded sharp cheddar cheeseSet Instant pot to sauté. Sautè together the butter, olive oil, and onion, carrots, zucchini, thyme, nutmeg, cayenne and a large pinch each of salt and pepper for 5 minutes. Pour in the broth. Add the broccoli and bay leaves. Cook on high pressure for 8 minutes.Use the quick release and release the steam. Remove the bay leaves. Blend the soup until chunky smooth (not totally puréed). Set the Instant pot to sauté. Stir in the milk and cheese, and cook 5 minutes. Ladle the soup into bowls and top with fresh thyme...and more cheddar. Eat and enjoy.

These are some of the best --> sweet potatoes, parmesan cheese, butter, fresh herbs, plenty of flaky sea salt and black pepper. The secret? Rolling the mashed sweet potatoes in bread crumbs for a crispy on the outside, soft on the inside tater tot. Finish with a drizzle of herb butter. SO GOOD.
