The eggs I mean? You guys know how much I love an egg with my meal, right? Breakfast, lunch, dinner, snack… whatever, I love eggs. I think fried are probably my favorite, BUT I’m really loving soft-boiled and poached at the moment as well. I especially love eggs with carby things like toast, pasta, rice and obviously Naan. Naan is always a favorite of mine, but I am guessing, if you’ve been reading for a while, that you knew that too.
Geeze, am I predictable or what?? Oh well, it’s good food, so predictable or not I am happy!
So I feel like I have been blab, blab, blabbing to you guys all week, but umm, my brother Kai and his girlfriend Caitlin just stopped over to say goodbye before they leave for school (Cait to Cinci and Kai to LA). They are the last two “holiday guests” to go and I am totally sad. One, because the holidays are over and I didn’t get enough chill out time with my Christmas tree and ABC Family’s 25 Days of Christmas (I maybe even cried throwing out my Christmas tree over the weekend) and two, because Kai and Caitlin are my most favorite people. They chat with me, Cait does my make-up, and Kai makes me DO things… like other than work.
Good brother, right?
They even got me to leave my house and venture out into the real world on Monday and head down to Denver to shop…till we dropped…literally. We shopped and shopped and I think I passed out the moment we got on to the highway to head back up into the mountains. I think it was the combo of tiredness and the bowl of rice + salsa little Miss Asher and I shared from Chipotle (rice for Asher, and salsa with a side of rice for me, Kai got a burrito the size of my thigh…I was like, whooooaaa). Yeah, that is how we roll. Bowls of rice and salsa. Odd?? For sure, but good. So good.
We girls like our carbs.
Also, I have decided I am totally over being the third wheel. UGH. How are people supposed to meet other people in this world if they work from home and maybe… never leave?? Oh man, oh man.
2016 life goal: get out and meet someone so I am no longer the third wheel. Cousin Abby? You with me on this??
Anyways, they are gone, and now it’s officially back to reality around here. Is this hitting anyone else a little hard this week? I’m feeling like there may be a lot of us in the same boat here, no??
Good news is I am bringing eggs to the table today. Eggs all cozy in a garlic herbed yogurt, topped with a spicy coconut butter and sitting on a piece of fresh, hot, naan.
These Turkish fried eggs in herbed yogurt could honestly be made for breakfast, lunch or dinner. The dish comes together so quickly, is totally healthy and just kind of the ultimate power meal. And did I mention there is goat cheese involved too? And sun-dried tomato pesto AND… a spicy coconut butter sauce – this sauce is legit and delish, and apparently very commonly paired with turkish eggs from what I have read.
Traditionally, turkish eggs include a butter sauce made up of Aleppo chile pepper flakes, paprika and butter but I can’t get the Aleppo chile pepper flakes at my local grocery store and I didn’t want to order them from Amazon, so I just used crushed red pepper flakes. I’m sure the flavor is slightly different, but I think the butter sauce is amazing, so I’m going with it! I also used half coconut oil to keep this recipe on the healthier side. After all, we are staying committed to a Healthy January – remember!
I really love this recipe. The combo of fried eggs, creamy-garlicy-herby yogurt, spicy butter sauce, sun-dried tomato pesto and soft and fluffy naan is truly out of this world. I added some fresh spinach for color, plus extra veggies, a sprinkle of goat cheese and toasted sesame seeds.
This is my ultimate anytime, any day, meal right here. This meal comes together in under thirty minutes, and whether you are using store-bought naan or homemade, all of the toppings are super healthy. Hello greek yogurt, eggs, spinach, garlic, herbs, lemon, tomatoes, chiles and sesame seeds!!
