Strawberry Lemonade Aperol Margarita. Mixed simply with sweet strawberries, orange liquor, tequila, and the twist on this drink – Aperol and lemon. Simply blend with ice and finish with spicy/sweet ginger beer. A refreshing summer cocktail that’s perfectly icy, sweet, spicy and so delicious! The salted Tajin-lined rim keeps everyone coming back for a second round. Make my mocktail version to serve up to family and friends who don’t drink – everyone loves strawberry margaritas!

Then it will be back to regularly scheduled programming come fall with a new drink every Saturday!
For now, I’m very excited to tell you all about this fun margarita. It truly is summer in a cocktail. Such a great way to celebrate the Memorial Day weekend. Also, the colors are even a little patriotic too!

Here are the details
You’ll need lots of fresh strawberries, a bottle of your favorite tequila, Aperol, Cointreau, and lemon and lime juice. And then top with a spicy-sweet ginger beer to sweeten things up!
The Aperol gives the margarita a special touch with its sweetness and hints of orange and vanilla. Such a unique but delicious combination with spring/summer strawberries!!
The addition of lemon adds a kick that’s unexpected yet so delicious. I love the pairing of lemon with tequila and berries.
Since fresh strawberries are at their ripest these days, I decided I’d use lots of them in this fun drink. Using fresh berries is key, but we need to muddle them down to release the sweet juice.

Step 1 – rim your glass with Tajin
I mix Tajin spice blend with flaky sea salt, then run a lemon wedge around half of my cocktail glass and rim each glass with Tajin salt. Do not skip this. It’s so yumm!

Step 2 – muddle the berries
Muddle the strawberries together with the tequila. This helps to infuse the tequila with great flavor all while squeezing out the juices from the berries.
Step 3 – shake and strain
Add the Aperol, Cointreau, lemon juice, and lime juice. Fill with ice and shake until combined. Then strain the drink into your prepped salty Tajin-rimmed glasses.
Step 4 – Top it off
Finish off each margarita with ginger beer, garnish as desired, and enjoy every spicy-sweet sip!
Simple, unique, delicious, and so pretty too.

Strawberry Lemonade Aperol Margarita.

Ingredients
- Tajin for the rim
- 4-6 strawberries, sliced
- 2 ounces silver tequila
- 1 ounce Aperol
- 3/4 ounce Cointreau (orange liquor)
- 1 ounce (2 tablespoons) lemon juice
- 1/2 ounce (1 tablespoon) lime juice
- 1/3 cup strong ginger beer, for topping
- 1 slice lemon for rimming glasses
Instructions
- 1. On a shallow plate, mix the Tajin with 2 tablespoons sea salt. Rim your glasses with the Tajin salt, then fill the glasses with ice.2. In a cocktail shaker or glass jar, muddle the strawberries with the tequila, squashing everything to release the juices. Add the Aperol, Cointreau, lemon juice, and lime juice. Fill with ice and shake until combined.3. Strain into your prepared glass. Top off with ginger beer. Garnish with strawberries and herbs. Drink and enjoy!
Notes
To Make a Mocktail: omit the tequila, Aperol, and orange liquor. Use 2 tablespoons of apple cider or sparkling apple cider and mix with 1 tablespoon of orange juice.

My husband and I made this cocktail over the holiday weekend and loved it!!
My only suggestion- add a bit of the muddled strawberries to the drink. They a boozy punch of sweet strawberry flavor.

This is DELICIOUS! We made a slight tweak because I was batching out multiple drinks at a time, so I blended the strawberries into the tequila instead of muddling and it worked perfectly. We realized the name abbreviates to SLAM, and we have dubbed the ‘SLAM’ our official summer cocktail!

My new summer cocktail. We were out of Aperol so my husband suggested to use Campari. I’m not a Campari fan but couldn’t really tell. Also didn’t have the Tajin to rim the glass so I used the pink salt and TJ’s chili lime seasoning. It was refreshing and delicious. Garnished with mint and an half strawberry. What a fun new drink!

I don’t understand why it is called a Margarita.
Well, it has tequila, lime, orange liqueur and a salted rim all are typical in a margarita. Though this isn’t a typical margarita I can see why it is called that.
