It doesn’t look like it, but when you read this recipe, to me, it screams retro. Retro, like a recipe your grandma would have made way back in the day. This is totally something my Nonnie would have made on repeat. 

It’s EASY, which we of course love. My Nonnie was a real pro at creating delicious dinners that took very little effort on her part. She knew her time was better spent shopping with me! 

Her secret was using ingredients that did double the work. She would incorporate a lot of store-bought seasoning packets and sauces to add flavor. She’d also take shortcuts whenever she could. But regardless, her dinners were always delicious, and I know she’d fully approve of this recipe.

So what is the “retro” secret ingredient here? A little bit of ketchup. It gives this sticky sauce added body, flavor, and sweetness.

I know it’s not a new concept by any means, but I don’t often use ketchup for cooking. I usually reserve it for dipping my french fries. But I’m now sold on using ketchup in sauces. Sounds odd, but wow, it’s so delicious.

The details

This recipe is so simple and straightforward. Grab some broccoli and chicken, I love to use a mix of chicken breasts and thighs. My family prefers chicken breasts, but I think thighs always add flavor. They give just the right amount of fat to keep chicken from drying out. I find a mix is always nice! 

Arrange the chicken and broccoli inside a baking dish. I use a smaller sheet pan with sides. Ideally, you want to use something a little smaller than a 9×13 inch baker. This will allow the sauce to better thicken around the chicken. A sheet pan with sides is perfect!

Now the sauce. Mix equal amounts of honey, ketchup, and tamari (or soy sauce) together. Then add tart pomegranate juice, garlic, ginger, and chili flakes. Mix and pour the sauce over the chicken. 

Bake until the sauce thickens slightly around the pieces of chicken and broccoli.

At the end of cooking, I like to switch the oven to the broil setting and get the chicken caramelized on top. Just watch closely, the broiler can really work FAST. 

I was shocked at how well the timing of everything ended up working out. Nothing fancy here, just simple cooking, but very delicious.

Serve the sauce, chicken, and broccoli over steamed rice with plenty of green onions, and if you’re into it, pomegranates too. I love using them because they add color and juiciness.

  • 1. Preheat the oven to 450° F. Rub a baking sheet with oil.
    2. Arrange the chicken and broccoli in the prepared baking dish.
    3. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Bake for 25-30 minutes, until the chicken is cooked through and the sauce is bubbling.
    5. Turn the oven to broil and broil 3-5 minutes, until the chicken caramelizes on top. WATCH CLOSELY, the broiler works fast. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

Instant Pot

  • 1. Arrange the chicken and broccoli inside the instant pot bowl.
    2. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Seal the lid and cook on high pressure for 8-10 minutes.
    3. Once done cooking, release the steam. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

    We made this tonight and when it still had 7 minutes in the oven it was burnt. The chicken was dry and there was hardly any sauce. I would not make this again!

    1. I should have read the comments before making this. Yes, very watery, so I poured off the liquid and thickened it with cornstarch, then returned it to the pan, mixed, and put it under the broiler for a quick minute. Sprinkled with some sesame seeds before serving. Very good! ( I used a mix of breast and thigh meat.)

    This recipe sounded so good. Just made it and I’m glad I was just doing it for myself for lunches. As others said, it’s very watery. And, since I used parchment paper (which was an option in the recipe) I quickly realized I could not put under the broiler. If you do that once you never do it again! The broccoli is way over cooked and should probably be added after the chicken has been cooking a while. I ended up draining the watery sauce that was left after cooking and thickening it with some cornstarch on the stove. I also used half chicken breasts and half chicken thighs. The breast is dry so I’d definitely use thighs if making this. Not sure how this would have turned out if I’d been able to broil it but this recipe needs to be “fixed” because as written, it’s not worth making.

    This sauce is sooo runny. Didn’t work. Doesn’t look anything like the picture and I followed directions to a T. Flavors were good.

    Very good. I followed directions/amounts except the following: I used OJ, velveted the breasts by adding some baking soda for a bit while I cut the thighs. After that, I added corn starch to all the chicken while I mixed up the sauce, which I then tossed in with the chicken. I cooked the chicken (and sauce) before adding the broccoli, which I’d recommend if you like a crispier broccoli. Ironically (based on reviews) ended up with not a lot of extra sauce! My boys all said it smelled great and tasted good. I will add more red pepper than 1/4-1/2 tsp I used, and yes, I’ll make it again! (Also, I used precut parchment paper on my sheet pan and have a ton of burned sauce on there. Next time, use foil.)

    I really really loved this recipe & so did my boyfriend! Even my picky son ate it. I didn’t have enough chicken so I halved the sauce recipe. I would definitely make it again but would consider adding a tsp of cornstarch. Also added oyster mushrooms & sugar snap peas & it was delicious! I cooked the chicken 15 min then added the veggies. Yum!

    Agree with a lot of the other comments…the sauce is a watery mess. I had to add cornstarch to thicken it up. Won’t be making this again.

  8. i’m confused, do you make it in a sheet pan or baking dish???!! your directions say sheet pan (both on video and your online recipe), but the video SHOWS a baking dish??!!

    This is good in concept, but did not at all turn out as pictured. I followed directions exactly, but as earlier comments mentioned, the sauce will not thicken unless you add cornstarch. After 6 minutes of broiling my tray was still a watery mess. I ended up pouring the sauce into a pot and added cornstarch to make it somewhat thicker. In the end, this was much too sweet for my taste and wouldn’t make again.
