It doesn’t look like it, but when you read this recipe, to me, it screams retro. Retro, like a recipe your grandma would have made way back in the day. This is totally something my Nonnie would have made on repeat. 

It’s EASY, which we of course love. My Nonnie was a real pro at creating delicious dinners that took very little effort on her part. She knew her time was better spent shopping with me! 

Her secret was using ingredients that did double the work. She would incorporate a lot of store-bought seasoning packets and sauces to add flavor. She’d also take shortcuts whenever she could. But regardless, her dinners were always delicious, and I know she’d fully approve of this recipe.

So what is the “retro” secret ingredient here? A little bit of ketchup. It gives this sticky sauce added body, flavor, and sweetness.

I know it’s not a new concept by any means, but I don’t often use ketchup for cooking. I usually reserve it for dipping my french fries. But I’m now sold on using ketchup in sauces. Sounds odd, but wow, it’s so delicious.

The details

This recipe is so simple and straightforward. Grab some broccoli and chicken, I love to use a mix of chicken breasts and thighs. My family prefers chicken breasts, but I think thighs always add flavor. They give just the right amount of fat to keep chicken from drying out. I find a mix is always nice! 

Arrange the chicken and broccoli inside a baking dish. I use a smaller sheet pan with sides. Ideally, you want to use something a little smaller than a 9×13 inch baker. This will allow the sauce to better thicken around the chicken. A sheet pan with sides is perfect!

Now the sauce. Mix equal amounts of honey, ketchup, and tamari (or soy sauce) together. Then add tart pomegranate juice, garlic, ginger, and chili flakes. Mix and pour the sauce over the chicken. 

Bake until the sauce thickens slightly around the pieces of chicken and broccoli.

At the end of cooking, I like to switch the oven to the broil setting and get the chicken caramelized on top. Just watch closely, the broiler can really work FAST. 

I was shocked at how well the timing of everything ended up working out. Nothing fancy here, just simple cooking, but very delicious.

Serve the sauce, chicken, and broccoli over steamed rice with plenty of green onions, and if you’re into it, pomegranates too. I love using them because they add color and juiciness.

  • 1. Preheat the oven to 450° F. Rub a baking sheet with oil.
    2. Arrange the chicken and broccoli in the prepared baking dish.
    3. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Bake for 25-30 minutes, until the chicken is cooked through and the sauce is bubbling.
    5. Turn the oven to broil and broil 3-5 minutes, until the chicken caramelizes on top. WATCH CLOSELY, the broiler works fast. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

Instant Pot

  • 1. Arrange the chicken and broccoli inside the instant pot bowl.
    2. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Seal the lid and cook on high pressure for 8-10 minutes.
    3. Once done cooking, release the steam. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

If you plan to cook this in the instant pot I would recommend a few changes. 1) cook the broccoli separately (otherwise it turns too near mush). 2) I’d reduce the amount of ketchup and honey by a little bit and add a little rice vinegar. 3) I’d either add cornstarch to the sauce at the beginning or plan to add it to the sauce at the end and cook it on the sauté setting. There is no way the sauce will thicken up without it.

Tieghan, I made this in the Insta pot after reading the comments I made 1 1/2 of the marinade put half of that in the Insta pot to cook with the chicken and the other half on the stove and thickened up with some cornstarch, it was perfect. What a wonderful meal easy and beautiful taste. Also made it with the jasmine rice and didn’t forget to add the green onions and pomegranate. Both my adult daughters were with their husbands and they would not leave until I showed them the recipe. Thank you so much for sharing this with US. It was just perfect. And I have a large family from a lot of other than the sisters. This is gonna be a big hit with my big family. It’s a five stars recipe. if you haven’t had success with it, try the Insta pot it’s the only way I’ve ever cooked this, but it came out wonderful.

  3. Hi! My husband and I tried this recipe tonight but the sauce totally burnt on the sheet pan/parchment and we even cooked at a lower temp of 425. Should it be cooked in more of a dish not a baking sheet?

    I’m a sucker for any HBH recipes that combine garlic and ginger, and this was another hit in our house. Great flavor and filling while still being healthy. I deducted one star because I agree with the other reviewers that this needs some cornstarch in the sauce – I tried making it without and the sauce was very watery, rather than sticking to the chicken. I’ll definitely make this again, just with cornstarch next time.

    Came together super fast! Quick, easy, and most ingredients are always on hand however, was not wild about the ending result flavor. A little to bbq sauce like for my taste but was still tasty. I also ended up separating chicken from the sauce once cooked through and finished sauce on stove top to thicken consistency.

    I’m confused why it says to cook the chicken and broccoli with ALL that marinade, but the photo at the end clearly has had sauce spooned over it upon plating.
    I followed all instructions, the sauce was tasty when I poured it on. At the end of the cook time, everything is just damp, the sauce never got gooey, and all the flavour pretty much disappeared. Would have been smart to save half the marinade for after. Or add some corn starch? IDK but this was not great.

    The flavor of the sauce is wonderful. I listened to some of the other comments and just added a tablespoon of cornstarch directly to the sauce. I used the sheet pan method too, and used a shorter cooking time since I had a fairly thin chicken breast, and I waited until the last 5 minutes to add the broccoli. That turned out just great . Will make again for a quick week night meal. Again, yummy sauce.

    After reading the reviews, I still decided to give this a try for dinner tonight and just slightly modified it. I cut out the broccoli and just did Chinese vegetables on the side and added a cornflour slurry to the dish halfway through cooking. It was super tasty and will definitely be making it again!
