This simple Sheet Pan Sticky Ginger Soy Chicken and Broccoli is about to become your new go-to meal. Easy homemade, extra saucy chicken, tossed in a gingery, sweet, spicy, and extra sticky honey soy sauce. Serve with steamed rice and broccoli – cooked right alongside the chicken – for the easiest sheet pan dinner. A delicious, fun, take-out style dinner made at home – and much healthier too – that’s great any night of the week!
It doesn’t look like it, but when you read this recipe, to me, it screams retro. Retro, like a recipe your grandma would have made way back in the day. This is totally something my Nonnie would have made on repeat.
It’s EASY, which we of course love. My Nonnie was a real pro at creating delicious dinners that took very little effort on her part. She knew her time was better spent shopping with me!
Her secret was using ingredients that did double the work. She would incorporate a lot of store-bought seasoning packets and sauces to add flavor. She’d also take shortcuts whenever she could. But regardless, her dinners were always delicious, and I know she’d fully approve of this recipe.
So what is the “retro” secret ingredient here? A little bit of ketchup. It gives this sticky sauce added body, flavor, and sweetness.
I know it’s not a new concept by any means, but I don’t often use ketchup for cooking. I usually reserve it for dipping my french fries. But I’m now sold on using ketchup in sauces. Sounds odd, but wow, it’s so delicious.
This recipe is so simple and straightforward. Grab some broccoli and chicken, I love to use a mix of chicken breasts and thighs. My family prefers chicken breasts, but I think thighs always add flavor. They give just the right amount of fat to keep chicken from drying out. I find a mix is always nice!
Arrange the chicken and broccoli inside a baking dish. I use a smaller sheet pan with sides. Ideally, you want to use something a little smaller than a 9×13 inch baker. This will allow the sauce to better thicken around the chicken. A sheet pan with sides is perfect!
Now the sauce. Mix equal amounts of honey, ketchup, and tamari (or soy sauce) together. Then add tart pomegranate juice, garlic, ginger, and chili flakes. Mix and pour the sauce over the chicken.
Bake until the sauce thickens slightly around the pieces of chicken and broccoli.
At the end of cooking, I like to switch the oven to the broil setting and get the chicken caramelized on top. Just watch closely, the broiler can really work FAST.
I was shocked at how well the timing of everything ended up working out. Nothing fancy here, just simple cooking, but very delicious.
Serve the sauce, chicken, and broccoli over steamed rice with plenty of green onions, and if you’re into it, pomegranates too. I love using them because they add color and juiciness.

Unfortunately this recipe came out quite soupy and without the “sticky” quality despite following it to a tee in the oven. Flavors were still good but the sauce was a big miss.

Followed recipe exactly. Chicken was overcooked and dry. Broccoli was mushy and not edible. Sauce was watery. Disappointed.

Lovely flavours, however:
1) I cooked mine on 180c for 17 mins and the chicken was overcooked! So that’s half the time, and a lot lower temp
2)Although the chicken was overcooked, the broccoli was still crunchy
3) Don’t think I’ll make it again, but if I did I think I would just boil the broccoli so it’s perfect, and then just cook the chicken in the oven at the lower temp for less time than the recipe states
Such a shame, seeing as there is so many negative reviews – hopefully the recipe can be adjusted! 🙂

Ive made this three times now and love the sauce— it’s inspired me to add ketchup to several other sauces I make for that tomato-y tangy flavor! The most recent time I made this, my chicken breast chunks came out pretty chewy/ tough. Any tips to avoid this? I’m wondering if I cut them up too small.

Wow this turned out amazing! I used chicken thighs and I did bake it on a sheet pan. I can’t see this being anywhere close to what I got if it was made in an instant pot. I would absolutely make this again! Couldn’t be easier.

I usually love HBH’s recipes, but agree with other comments on this particular recipe. The chicken was very over cooked and I didn’t even do the broiler part. Not making the comment to be unkind, just to let others know to perhaps adjust the cooking time and temp on the chicken.

Used the instant pot directions and ended up with a bowl of mushy broccoli and watery sauce. Really unappetizing with none of the “sticky” quality at all. Chicken was tender, but fell apart with a fork. No texture to this dish at all—if you’re making, don’t do the instant pot directions!

Delicious! My hubby doesn’t loved cooked broccoli and he said it was good in this. I did an extra cup of broccoli, but I think I’ll do even more next time.

The instant pot instructions need to be revised. Cooking broccoli on high pressure, with the chicken for 18-20 minutes, will result in a broccoli mush. Broccoli in the instant pot cooks within a few minutes.
Also readers, be cautious about using parchment paper under a broiler. It can ignite.

I made this last night and the sauce was not thick at all and the chicken was way over cooked and dry. I’ll try again and cook less with a cornstarch slurry. Good flavors.
